I have a crisper full of vegetables, I got them all at SM Supermarket. Mona, Corry and Tita Cena had lunch at my house today.
I cooked Thai Stir-fried Vegetables
Hahahaha! It is Thai because I used Pantai Oyster Sauce and Thai Fish Sauce..... So....... it a Thai dish!
Stir-fried Vegetables
1 pc.Chicken Breast, meat and bones separated
1 C. Chicken stock from chicken bones
1 T. Sugar
1 T. Thai fish sauce
1-2 T. Pantai oyster sauce
Dash of salt
1/2 t. Cornstarch
Broccoli florets, par boiled for 2 minutes
Chinese cabbage, parboiled for 1 minute
3 T. Cooking oil
2 cloves garlic, chopped
1 onion, sliced
2 stems leeks, sliced diagonally
2 stalks celery, peeled and sliced diagonally
Red and green pepper, cut into squares
Snow peas
Carrots, sliced into rounds
1 T. Cornstarch dispersed in
2 T. Water
Combine chicken stock, sugar, fish and oyster sauce, adjust according to your preference because this is how your sauce will taste.
Season uncooked chicken with salt and cornstarch.
Heat the cooking oil in a big wok, stir-fry the chicken briefly, set aside.
Sauté onion and garlic in the same pan where chicken was cooked.
Add the celery, leeks, peppers, snow peas and carrot slices, continue sautéing for a minute or two.
Pour the sauce, when it boils, add the chicken, broccoli and Chinese cabbage.
Thicken with the cornstarch slurry.
I love it when my vegetables are still crisp- tender. I hate eating overcooked veggies.
Corry brought very delicious Roast Liempo from Rustan's Rockwell.
It was surprisingly good! Well flavored, crunchy skin and perfect with Mang Tomas Lechon sauce.
So that was our healthy and unhealthy lunch.
