Easter Picnic Baskets

Tita Portia asked me to prepare sandwiches for her Easter Picnic Baskets.



  She conducted a one day craft class today with lunch.   She does not like messy food when she is teaching hence the sandwiches.

I made four  fillings.  Celine and Mona helped me cut the bread.  Round for the egg sandwich, square for the cheese pimiento, flower for the crab wasabi and heart for the chicken sandwich.

Chicken Sandwich Filling 1

1 K. chicken breast, flaked (3 cups)
1 C. Lady's Choice mayonnaise
1/2 C. Lady's Choice sandwich spread
1 t. salt
1 t. white pepper
1 T. white sugar

Chicken Sandwich Filling 2

1/2 k. chicken breast, boiled and flaked
80 ml. pack Lady's Choice mayonnaise
1/2 t. salt
1 t. sugar
white pepper

Cheese Pimiento Filling - Everybody loved it! One even suggested I bottle it and sell.  But is is so easy to make.  I would feel so guilty selling something even a 6 year old can make.

1 small bar Kraft Cheddar cheese, grated finely
1 small can Molinera Whole Red Pimiento - drained and chopped finely
1/2 C. Magnolia Gold butter, softened
1/2 C. Lady's Choice Mayonnaise
1 T. white sugar

Egg Filling

6 - 8 eggs, boiled then chopped finely (3 C.)
1/2 C. Magnolia Gold butter, softened
1 C. Lady's Choice Mayonnaise
3 T. pickle relish, drained
1 T. white sugar

Tita Portia assembled the baskets, I just added the bag of sandwiches.



Each  had 1 mini cup of potato chips, Oishi Sponge - Cheese, Oishi sponge - Chocolate, Assorted Easter chocolate goodies, paper towelettes, paper napkins and 1 bag of  sandwiches.





It was such a hit with her students that they want to do it again!
