Sinigang na Bangus sa Bayabas

Dangerously low but not enough to panic.  I just had dizzy spells all day and weekend long.  Cristina told me not to take my morning medications but to take it instead after lunch.  Also, she wants me to decrease my insulin by 10 units before bedtime.  An interim solution.

The dosage of medications prescribed to me by my doctor is for very high blood sugar levels (250-350).  Now that it is in the normal level, the dosage is way too much.  Hopefully tomorrow morning, Dr. Wassmer will decrease what I am taking.

My experiment today was Sinigang na Bangus sa Bayabas.  Hermie attended a birthday party last night and she brought home guavas for me.  I used it as a souring agent for my sinigang.  It was very delicious but I forgot to buy Kang Kong in Rustan's!  And .... I did not strain the guava, the small seeds were going in between my teeth.  But for a first time experiement, I would say I got a fairly good score in terms of taste.  I have to practice more to get it perfect.

Sinigang na Bangus sa Bayabas



1 whole bangus, cleaned and scaled - slice into 4
4 C. rice washing
1 onion, sliced
2 tomatoes, cut into quarters
12 pcs. guava
2-3 T fish sauce
puso ng saging (soaked in water with kalamansi juice to prevent discoloration)
kang kong leaves
jalapeno pepper

Let the rice washing boil, then add the tomatoes, onions and guava.  When soft, mash the tomatoes and guava with the back of a spoon.  Strain.

Let the stock boil again and add the puso ng saging, fish and fish sauce.  Cook covered for 15 minutes over low flame.

Add the kangkong leaves in the last minute of cooking.

Serve with Binagoongan Baboy.
