Sarita's Chicken Afritada

Finally! I know how to cook Chicken Afritada! Thank you  Sarita for teaching me your recipe!



Chicken Afritada

1/2 k chicken quarters, cut into 3

1/4 t. Rock salt

2 pcs calamansi, juice of

1/4 C Minola oil

1 onion, sliced

3 cloves garlic, chopped

2 tomatoes, cut into quarters

3 inch Chorizo Pamplona, sliced into rounds

1 C. Hot water

1 pc. Knorr chicken cube

1 T. Tomato paste

1 potato, cut into cubes

1 carrot, cut into cubes

1 red bell pepper, cut into squares

Marinate chicken with salt and calamansi for 10 minutes.

Heat the oil in a wok over low heat.

Saute the onions until transparent.

Add the garlic and tomatoes. Saute for a bit and cover the wok. Cook until tomatoes are soft and oil becomes orange.

Still over low heat, add the marinated chicken. Continue sauteing for a few minutes. Add the chorizo. Cover the pan and cook for 15 minutes.

Add hot water and chicken cube.

When it boils, add the tomato paste, potatoes and carrots. Cover and cook for 10 minutes.

Add the red pepper and cover again for 5 minutes.

Season according to taste with salt and pepper but I did not add any seasoning anymore.
