September Happenings

September went by like a blur!  Time really flies so fast when you are having fun and one is quite busy.

The highlight of the month was the Junkies trip to Puerto Princesa. 


Junkies minus 1 plus 1!  Shey, Mona and Cat minus Tricia plus Chris!


Hahaha Who said I am not very good in math?!?!

It was also Mona's birthday last September 16.

All we did in Palawan was eat! And eat! And Eat!

We checked in at Microtel by Wyndham.




Let me list down all the restaurants and the food we ate.

Ka Inato for our 1st meal.

We loved the Chicharon Bulaklak! We loved it so much we had 4 servings and ate it all under 20 minutes!

On the second day, we had lunch at Tito Ernie's.

Then it was time to go home.


I bought 2 pieces of Paa at Haim's Inato to bring home to Manila.  That's how much I love it.

There was another birthday celebrant last September!  Dra. Cristina! Known as Tricia by everybody!



We had a Korean dinner at my house with the Baliws and the Gordons.

Then on the day of her birthday, we went to their house to surprise her!




It was the day after my eye surgery.


Finally I can see very well now! 

But just with one eye.  Will have another surgery next year.

September was a really eventful and  busy month for me.

I'm still following the Keto Way Of Eating as the people in the Keto group would call it.  My sugar has been normal since I started with the diet.

Thank you, Lord!  I just need to stay focused and not get tempted.

I have a long way to go but with God's help and hard work I will be able to sustain this healthy lifestyle.

Roast Thai Chicken

Roast Thai Chicken


1.2 - 1.5 Kg. Whole Chicken, cut along the back
2 T. Thai light soy sauce
2 T. Thai fish sauce
3 cloves garlic
1/2 t. whole black pepper
3 roots of cilantro/wansuy

Crush the garlic, peppercorn and cilantro roots using a mortar and pestle then rub  the mixture on the chicken.

Add the soysauce and fish sauce.

Marinate overnight.

Drain and bake in the oven or turbo broiler at 170C for an hour.

Increase the temperature to 250C and bake for 10 more minutes.  Baste with the drippings.

Serve with tamarind sauce.

Tamarind Sauce

1/4 C. tamarind paste
1 T. fish sauce
1 T. palm or brown sugar
2 T. water
chili flakes

Combine all the ingredients in a saucepan and cook until it is slightly syrupy.

Add chopped wansuy and ground toasted glutinuos rice.
