Mango Walnut Bars

I love Mango Walnut Bars because it is moist and chewy.


Well, mine are!

As a matter of fact, I have been baking it quite often these past few days.

For me to eat and for me to give it as a gift to special friends.


Will share the recipe with you.

Mango Walnut Bars

1 C. butter
1 C. white sugar
1 C. brown sugar
3 eggs
1 1/4 C. flour, sifted
1 t. baking soda, sifted
1 t. baking powder, sifted
200 g. dried mangoes, chopped


100 g. walnuts, chopped coarsely


Pre-heat oven at 350 F (180C).

Mix flour, baking soda and baking powder in a bowl  Set aside half and add the remaining half to the chopped mangoes. Mix until the mangoes are coated with flour.

Cream butter until fluffy.  Add the brown and white sugar.

Next, add the eggs one at a time.

Fold in the flour followed by the dried mangoes.

Lastly, fold in the walnuts.

Put the batter into a 9x13 baking pan lined with greaseproof paper.

Bake for 10 minutes at 350F.

Lower heat to 300F and bake for 30 minutes more.

Remove from the oven.

Cool for an hour before cutting it into squares.


Pinky wanted to learn how to make the Mango bars so we baked it in Dodai's apartment.





Earlier in the day last Tuesday, Cristina, Pinky, Dodai and I had lunch at Mogu, Serendra.


Dodai ordered the Pumpkin Soup


and Beef Salad.


Pinky had the Katsudon.


Cristina and I both had the 5-pc Ebi Tempura with rice.


She had to go to her clinic after lunch.

We had dessert and coffee at Breadtalk, Uptown sans Dra.


Pinky plans to bake the bars again because she loved it, as well.

It is very easy.... degree of difficulty?
