Every time I eat Kare-Kare, my sugar goes up a bit. I do not know why but I have already observed the trend. Maybe it is the ground peanuts? Or the rice I eat with the Kare-Kare? I still have not solved that mystery yet.
I made Tuna Omelette this morning. I need to get back on track. I have been derailed during my birthmonth celebrations and it is very hard follow the rigid wheat - free diet after indulging in some food not in the allowable list.
The first thing that I should do is eat 2 eggs for breakfast.
Tuna Omelette
2 eggs, beaten with a little salt and pepper but do not over beat
chopped onions
chopped tomatoes
drained hot and spicy tuna
2 T. green peas
olive oil
Heat the olive oil in the pan. Saute the onion and tomatoes for a few minutes under low heat. Add the tuna and peas. In another pan, heat the olive oil, lower the heat and pour the beaten eggs, distribute the tuna filling evenly over the eggs. Under low heat, cook the omelette until it is not runny anymore.
