I invited Jing for lunch today and she helped me experiment with Hainanese Chicken Rice.
Our friend from Singaproe, Leah, gave me a pack of Prima Taste Ready-to-Cook Sauce Kit for Hainanese Chicken Rice, Poached Chicken with Chicken Flavoured Rice. (It is also available in Rustan's Rockwell.)
Good thing we started early because I did not realize it would take a long time. We used a 1.5 kg. chicken. We followed the instructions faithfully but when we chopped the chicken, it was still bloody, so we put it back in the pot with broth and poached it for an additional 30 minutes.
We also cooked the rice according to the directions on the box, we added more water because after the prescribed cooking time, it was still "crunchy".
After waiting for a looongggg time, we enjoyed our experiment. We especially loved the sauces that came with the pack.

Mushroom, Monterey Jack Cheddar Cheese and Caramelized Onions 2-egg omelette
It was so ugly!!! :(( I always watch the chefs in hotel make the omelette. Mine did not turn out as appetizing as theirs. I wonder what is the proper technique.
