To Die For Homemade Mayonnaise

Finally!

Yes!

This is the mayo that my mom used to make.... Very smooth and silky! Hahahaha Sounds like a shampoo ad!

I did not stop experimenting until I have perfected the recipe. Do not mind the other mayo recipes in my blog. This is "To die for"!!!!

Mayonnaise

6 egg yolks, room temperature

1/2 t. Salt (or to taste)

1/4 t. White pepper

1 1/2 C. Corn oil

5 pcs. Kalamansi, juice of

Combine the yolks, salt and pepper in a bowl. Beat with a wire whisk slowly. Add the first half cup of corn oil, 1/4 t. at a time.

Then the rest of the oil 1 t. at a time, alternating with the kalamansi 1/8 t. at a time.

I did not use my kitchen aid anymore because I might over beat and the oil will separate from the yolk mixture.

A little bit tiring but it tasted so delicious!

The consistency was creamy and not runny.

My two previous experiments were ok but the mayo was a bit compact/jelly-like.

I spent the whole afternoon preparing my Shrimp Sandwich.

Would you believe half a kilo of fresh Suahe only yielded 4 sandwiches?!?!!!!

Whew! So super worth the effort.
