My experiment today was Pasta Pomodoro with Broccoli and Raisins. Sounds EWWWW?!?!
Surprisingly, it was not. I kid you not!
Pasta Pomodoro with Broccoli and Raisins
125 g. spaghetti noodles, cooked al dente
1 t. olive oil
3 cloves garlic, sliced thinly
400 g. canned whole tomatoes, liquified in a blender
1 t. rock salt
1 T. brown sugar
1/2 t. black pepper
2 T. raisins
basil leaves, torn into small pieces
Boil the broccoli in salted water until fork tender. Drain and set aside.
Saute the garlic in olive oil until fragrant. Add the liquified tomatoes, salt, sugar and pepper. Simmer for 20-25 minutes until dense and darker in color. Add the raisins and continue cooking for 5 more minutes. Then add the basil before serving.
Pour sauce on top of the noodles then top with the broccoli florets.
I was really so surprised it tasted quite delicious! I was not a pasta fan before so the new taste is quite a big welcome to my palate.
Breakfast was a simple affair of oatmeal with cinnamon and sliced banana.
I made a salad for lunch with black grapes
and my favorite pears of all time, Anjou pears!
A mistake again today, I should have eaten more than salad for lunch, I got hungry in the mid-afternoon and had a plate of corn, carrots and peas.
It is important I get a daily serving of protein(peas) and a daily multi vitamin. I just bought Centrum.
After my first vegan day, I achieved a very small victory. When I checked my blood sugar this morning, it was only 169! I know it is still high but for the past 5 years, my average has been 200-250, so yes, it is a small victory, baby steps and I hope to see it get better everyday!
