Butter Toffee Popcorn

One of the snacks that Tita Linda Floro served at our KST merienda was the Butter Toffee Popcorn. I searched the web for an easy recipe and found 2.

Popcorn

1/4 C. Corn kernels

1 T. Cooking oil

1/4 t. Salt

Heat the oil in a pot.. Add the corn kernels. Cover and shake until the popping stops. Sprinkle with salt.

Butter Toffee Glaze (1st experiment)

1/4 C. Butter

1/4 C. Brown Sugar

2 T. Honey

Melt the butter, honey and sugar in the pan.

Stir until it caramelizes. Pour over the popcorn and bake at 250 F for 30 minutes.

Butter Toffee Glaze 2

2 T. Magnolia Gold Butter

2 T. Brown sugar

Melt the butter and sugar in the pan. When the sugar caramelizes, pour it over the popcorn. Lay on a baking tray and wait for it to harden.

But... Lia.... Being Lia..... A diabetic... Just had to drizzle melted chocolate over the Butter Toffee Popcorn!

Now, I am eating the whole serving just by myself.

If you plan to give it as a gift, maybe skip the chocolate part because it will only harden if you put it in the fridge. But what will happen to it if left at room temp? So.... Better just give it as Butter Toffee Popcorn.
