Last Meal Before I Die-T

I woke up very early to go to S & R and eat my "last" meal before I go on a Wheat-free diet tomorrow, September 1.

I had to eat my favorite cheese pizza! I also ordered the hot dog sandwich and cinnamon churros.

My friends asked me, Lia! All that for you?????

Of course, not! I took home half of the churros!

Hahahaha!

I am ready.... My mind is all set.... I've been psyching up myself for the past few weeks!

Lots of people are doubting me.... But I will do my very best.

Wish me luck! I know most of you will support me.

I will eat healthy but delicious food.

 

3 - Week Wheat Free Menu

Some of my friends, Cristina and Shey, will join me in my wheat-free diet starting September 1.

I made a 3 week menu. It is just a guide so people will have an idea what they can eat while following the wheat-free lifestyle.

It took me 2 nights to come up with a 3-week Wheat-free Menu.

Week 1

Monday

Breakfast:

Cheese and Vegetable Omelette

Ginataang Manok with eggplant

Thank you, Ninang Celina!

I got a package from Ninang Celina tonight! She is my confirmation Ninang.

Oh wow! Looooooook! A diabetic's sweet dream!

Ninang said I have to share with the Batgirls :( Jing, Mariger, Mayette, Mona and Corry. I even have to share with Batman (Jon) and Robin (Mon). :((

BUT..........

I get to choose the lip gloss I like and whatever I want from the loot!

Hip! Hip! Hooray!

And the best part of all..... I can eat them all tomorrow! My diet starts on Sunday!

Thank you, so much Ninang Celina!

I love you and I can feel your love all the way here!

Kettle Corn

Finally! After almost a month of experimenting and practicing, I have perfected my Kettle Corn recipe!

It is so easy to make and it's very healthy as opposed to microwave popcorn.

I can eat one whole serving in 10 minutes!

Kettle Corn

1/3 C. Cooking oil ( Baguio or Minola)

1/2 C. Popcorn kernels

1/4 C. White sugar

1 t. Rock salt or Fleur de Sel

Use a heavy bottomed cooking pot with cover. Put the oil and 3 kernels of popcorn. When the 3 kernels pop, add the rest. Shake the pot. After about 10-15 seconds, add the white sugar and continue shaking the pot with the lid on until the popping slows. Remove from heat and transfer into a big plastic bin with cover. Add the salt, cover and Shake.... Shake... Shake!

Eat while it is still hot!

 

Happy Birthday, Lia!

Today is my "real" birthday! Not happy birthday everyday anymore.

I was very overwhelmed by the outpouring of love from my family and friends.

As soon as I woke up..... I received gifts from PD!

Thank you, PD!!!

She gave me blue, white and aqua things!

I am in my blue color scheme nowadays. Before, it used to be yellow.... Then lavender.... Now it is blue and aquamarine.... The color of the ocean.

The day started with a simple breakfast..... My favorite.... Champorado and Tuyo!

I am still nauseated with the back to back breakfast I had in Marriot, Cebu.

I invited a few friends for lunch. I told them I am only going to cook Fried Chicken

and my favorite Children's Sweet Style Spaghetti. I do not like cheese on my pasta.

I am going to start my wheat-free diet again on September 1 so I am already eating all the wheat based food before the end of the month.

My Kuya ordered Pork BBQ for me!

Tita Cena made Chicken Potato Salad.

PD was writing to my other Ate in Canada and she said I was going to celebrate my birthday lunch with my second family, the Avancenas.

My KST group sang Happy Birthday to me again! Tricia even let me blow out a couple of candles which she stuck on the coffee jelly!

Mona said she was going to treat me at RK Garden for dinner.... Our favorite fried noodles.

When we got there... I was so surprised! My friends were there! Bibo, Serla, Miko, Jodie, Cristina, Cath and Jopet!

As in...... I did not have any clue at all! They treated me for dinner!

My after-dinner guests were Jon and Mayette.

Tita Cena also gave me Callos.

It was perfect with Toasted French Bread and butter.

There was still nachos from last night. I just bought the cheese sauce in Rustan's and got the beef and sour cream from Shey's house. Thank you, Shey!

Time flew so fast! I am another year older.

Hahahaha I would like to think age is just a number. If you see me walking on the street would you think I just turned 44 today? In my mind and way of thinking, I am still in my 20's. Denial?

I went to mass this evening to thank God for all the wonderful blessings He has given me, especially my family and friends. They are the most important people in my life because they brought me so much joy and happiness.

CNT Lechon Sinigang

Mona and I had our cooking/eating session with our KST friends, Shey, Cat with her son, Jose and Tricia tonight.

Their request was Cebu Lechon Sinigang.

I just followed the recipe at the back of Knorr Sinigang mix but boiled the Lechon for an hour and a half.

Mona taught us how to cook Crispy Bacon Slice Liempo.

She marinated the pork slices in kalamansi, Thai fish sauce and pepper then dredged it in cornstarch before frying.

Cat brought Ensaladang Mangga.

Our dessert from Tricia.... Magnum Chocolate and Strawberry.

Shey's permanent potluck assignment.... After dinner Chips and Dip!

She made the dip herself. Mona taught her a few weeks ago.

Cat is our resident bartender, she helped me make Sangria.

Sangria

1 bottle red wine

500 ml. Seven-up

2-4 T. White sugar

1 lemon, sliced

1 orange, sliced

1 apple, sliced

Mix all the ingredients in a pitcher and chill before serving.

I cooked Kettle Corn for them.

Yay! I did not burn it this time! I used the popcorn kernels I bought in Cebu.

Ohhhh what a fun night we had! Our tummies were stuffed to the max!

And then ..... When the clock struck 12.......

They all greeted me, Happy Birthday!

Hahahaha ha... Yes.... Today is my REAL birthday.

A Belly Happy Birthday in Cebu!

I celebrated my birthday weekend in Cebu with Ate and Gilly!

Ohhhhh my tummy was very happy and at the same time, very tired! It was more tired than my body.

I just have a few favorite places and food on my " to eat" list.

The most important of all and number 1 is......

CNT Lechon!

A Cebu trip for me is never complete without eating at CNT.

My Ate and I like their Dinuguan.

I even bought CNT Lechon to bring home to Manila.

We picked up our orders on our way to the airport at their Juan Luna Extension branch across SM City, Cebu.

We also ate at Zubuchon ....

My Ate and Gilly liked it better than CNT.

I suppose it is just a matter of personal preference.

But which would you rather eat?

For me, CNT would always win hands down.

We also tried other food on the menu of Zubuchon....

My number 2 on "My must eat in Cebu" list is....

Pochero at Kusina UNO!

Pochero is their version of Bulalo.

I always eat it with Rufina Patis, kalamansi and chili!

I was in Bulalo heaven!

I love their broth, it was very flavorful.

We also tried their fried chicken.

Cebu is also known for their cakes and Pastries. Gilly has a sweet tooth so we always had dessert.

The Factory Fudge - Chocolate and Vanilla ice cream strewn with marshmallows, nuts, homemade chocolate syrup, whipped cream, maraschino cherry and homemade chocolate fudge.

I was very happy. I posted the picture in FB and my friend, Cindy, said: Even the ice cream looked happy!

We went to this place called Phoebe's Cupcakery on Maria Luisa Road.

My best discovery of this trip..... TYMAD Bistro!

It is also located along Maria Luisa Road across Phoebe's.

OMG! I am not even fond of desserts but I could eat all the pastries!

I would die a happy camper!

I loved their Nutella Crepe!

Generous serving of Nutella plus the crepe was paper thin and not "eggy" at all!

Their Mille-feuille.....

Crunch... Crunch... Crunch.... The puff pastry was super flaky and crunchy!

I even told my Ate that the pastry has a sound!

Hahahaha

Ate said, Cebu is the "crunch" capital of the Philippines because almost all their food have a sound when you eat them! Especially the Lechon!

The breakfast buffet at Marriot Hotel had a lot to offer. I only got what I wanted.

First day....

Crispy bacon, chicken tocino, Cebu longanisa, danggit, beef tapa and plain rice.

Waffle, ube croissant, chicken sausage and crispy bacon.
Congee with floss and red eggs.
Baked beans.
Mango, papaya, Brie, dried fruits and cashew nuts.

Still excited to try most of the food. I was chatting with my friends the night before and told them I had to sleep already because I was preparing my body for breakfast!

Hahahaha

Cat said, it was her first time to hear that line but it made sense.

Second day....

My tummy was already overworked! I did not eat a lot...just...

Vegetable and cheese omelette made with 1 egg.

I asked the chef to cook bacon for me with brown sugar and not to make it crispy.

Tried the pork sausages, hash brown, fried rice and Pancit.

I enjoyed the pan de sal with Nutella and peanut butter.

The food concessionaires at the Mactan Cebu International Airport .....

Zubuchon has its own dine-in stall.

I just had Potato Corner Barbecue Fries and Tsim Sha Tsui Siomai.

We only ate and slept in Cebu! We did not do any of those sight seeing trips nor shopping!

My Ate just let me ticked off each restaurant from my list.

I can honestly say..... I had a BELLY Happy Birthday in Cebu!
