My niece, Gilly, is now 13 years of age. She is my Ate's daughter. I asked her what she wanted to eat for her birthday celebration yesterday in my house. Her request was the usual favorite of the kids.
My Children's Sweet Style Spaghetti
I was able to eat Pasta!!!! I used the Gluten Free noodles Manay Ana sent me from Vancouver.
I have not had spaghetti since I started my wheat-free diet in June 18. Of course, I only cooked a single serving for myself. The rest of the family had the ordinary noodles.
Fried Chicken
I am now a fan of the 8-part chicken. Sometimes, thicker parts, especially the one near the bones tend to be bloody and you end up frying longer and drying out the meat in the process. My secret in cooking moist and tender fried chicken is adding about 1-2 tablespoons of water.
Tip:
When the chicken is half cooked, add 2 T. of water. Lower the heat, cover the pan and cook for about 5-10 minutes. Remove the cover, increase the heat to brown the chicken.
* Very important: When you add water, the oil will rise up to the top so make sure the frying pan or pot is deep.
Gilly absolutely loves my Mashed Potatoes.
She declared it a few years ago as "The fluffiest mashed potatoes ever!"
My Ate brought ice cream cake from Dairy Queen.
Wriggly was able to join the celebration but just towards the end. Hahahaha! My family would freak out if he "ate" with us during our lunch. He just joined us for coffee and dessert.

Happy bday to your niece! I was able to buy brown rice macaroni and gluten free chocolate cake mix at Healthy Options for my son. i want to try my hands on gluten free baking, i just dont have the time :( - happy
