Vietnamese Beef Pho Experiment

When I ate at La Petite Camille, I realized their broth tasted like the broth of my Nilagang Baka. I have some soup stock in the freezer and experimented with Beef Pho.

Vietnamese Beef Pho

Beef stock

Rice noodles, boiled

100 gr. beef sukiyaki

Basil leaves

Cilantro

Been sprouts

Lime wedge

Sriracha sauce

Hoisin sauce

Boil the beef stock, add the beef and cook briefly. Pour over rice noodles.

Garnish with cilantro, basil and bean sprouts.

Squeeze lime and add the Sriracha and Hoisin sauce.

My Cookies

I baked again a batch of wheat-free dark chocolate chip cookies. Instead of the ground almonds with skin, this time, I used ground blanched almonds.

I also tweaked the recipe a little because my previous batch was too sweet for me.

I forgot to sprinkle sea salt!

I was inspired by the cookies I saw on Flipboard.

I am very happy now because I can bake using almond flour instead of all purpose or wheat flour.

Yay! My cookies are really good! Promise!

Uh oh! I cannot stop eating! It may be wheat-free but it is not sugar-free!

Grilled Poco Deli's German Meatloaf

Cindy gave me some Poco Deli goodies a couple of weeks ago. I am saving the sausages when I am well already so I can use my outdoor grill but for now, I used my contact grill for the German Meatloaf. I even called up the deli to ask how to heat it.


I ate the meatloaf with garlic rice and sunny side-up egg.

Healthy and Unhealthy Lunch

I have a crisper full of vegetables, I got them all at SM Supermarket. Mona, Corry and Tita Cena had lunch at my house today.

I cooked Thai Stir-fried Vegetables

Hahahaha! It is Thai because I used Pantai Oyster Sauce and Thai Fish Sauce..... So....... it a Thai dish!

Stir-fried Vegetables

1 pc.Chicken Breast, meat and bones separated

1 C. Chicken stock from chicken bones

1 T. Sugar

1 T. Thai fish sauce

1-2 T. Pantai oyster sauce

Dash of salt

1/2 t. Cornstarch

Broccoli florets, par boiled for 2 minutes

Chinese cabbage, parboiled for 1 minute

3 T. Cooking oil

2 cloves garlic, chopped

1 onion, sliced

2 stems leeks, sliced diagonally

2 stalks celery, peeled and sliced diagonally

Red and green pepper, cut into squares

Snow peas

Carrots, sliced into rounds

1 T. Cornstarch dispersed in

2 T. Water

Combine chicken stock, sugar, fish and oyster sauce, adjust according to your preference because this is how your sauce will taste.

Season uncooked chicken with salt and cornstarch.

Heat the cooking oil in a big wok, stir-fry the chicken briefly, set aside.

Sauté onion and garlic in the same pan where chicken was cooked.

Add the celery, leeks, peppers, snow peas and carrot slices, continue sautéing for a minute or two.

Pour the sauce, when it boils, add the chicken, broccoli and Chinese cabbage.

Thicken with the cornstarch slurry.

 

I love it when my vegetables are still crisp- tender. I hate eating overcooked veggies.

Corry brought very delicious Roast Liempo from Rustan's Rockwell.

It was surprisingly good! Well flavored, crunchy skin and perfect with Mang Tomas Lechon sauce.

So that was our healthy and unhealthy lunch.

 

Loratadine

Oh my Goodness! All it took was one Loratadine tablet and I am feeling so much better! Dr. Canlas prescribed it and like magic I am not coughing anymore!

That is why there is a reason why people go to the doctor, so they will get well!

People think that I am a hypochondriac because I am always going to the doctor but they do not understand I get sick easily.  It is not psychological ... I really get physical symptoms.  My immune system is very low.... If there is an epidemic and my friends and I are all together, I am the first one who will get sick. That is just the way I am.

I asked Dr. Canlas why am I always sick? He said, I am victim of a lot of situations.  I told him when I was in Tagaytay I was not coughing nor sneezing at all! He knows me quite well and said, I would not want to live there.

True, the reality of life is we live in a very polluted environment.  I cannot lock myself inside my room forever.  I live very near EDSA so it is impossible for me not to inhale dust and other pollutants.  I just need to learn how to live with it.

Asian Cooking at Home

Today was Asian cooking at home. I was able to buy the Pantai Tamarind Paste at Landmark Supermarket.

I used the Tilapia I had in the freezer but it is better to use Lapu Lapu.

I have been eating salad only at night for the past few days. I am crazy over Kewpie's Deep Roasted Sesame Dressing. Eega said I should try mixing the Japanese Soy Sesame Dressing with the Deep Roasted Sesame in equal parts.

I made Oriental Salad tonight with Dole Mandarin Orange segments, carrots, red romaine lettuce, toasted sliced almonds and grilled Chicken Tenders.

I tasted it at first with just the soy sesame dressing,

it was just OK but when I added the Deep Roasted Dressing, it became better!

I will experiment again tomorrow with other salad trimmings so I will not get bored.

La Petite Camille

La Petite Camille is a new Vietnamese resto in Greenbelt 5 which opened last December. The original branch is in Milbrae, CA.

Ever since I came back from Puerto Princesa, I have been craving for Vietnamese Pho. I even made my own at home.

After my doctor's appointment, I went to La Petite Camille.

There were no people, I had the place all to myself but then after a few minutes, a couple went in. How funny ..... I was listening to the woman giving a litany of all the food she was allergic to. Most of them were Asian ingredients. Hello?!?!?!? She was at a Vietnamese resto.

Back to the craving "du jour", I ordered the Pho Combination. It had boiled beef, raw beef and beef balls! My favorite!

Served with bean sprouts, lime segment and basil leaves. They gave a small serving of sriracha and hoisin sauces.

I tasted the broth first before I murdered the soup with lots and lots of sriracha and hoisin sauces. I asked for more and they willingly obliged.

The broth tasted like my Nilagang Baka soup. Not bad..... But then..... I have a tendency to add tons of sauces. I want it to taste like the Chao Long of Rene's Saigon in Palawan.
