Baby Tawilis

I can NOT eat Sans Rival!!! It is a wheat-free dessert but not sugar-free!  What a surge in FBS!  Now, I know better.  I hope what I ate today will make my reading lower tomorrow.

I woke up early to go to Poblacion Market which I refer to all the time as Bel-Air Market.  I bought some ingredients I need for my luncheon tomorrow. 

Then.... I saw fresh Baby Tawilis!!!  I like that kind of tawilis because it has no scales.  Perfect for deep-frying and then you eat it with piping hot Bulalo Soup!

But since I cannot eat fried foods because I am aiming for a lower FBS, I just cooked.....

Tawilis Pinangat



250 g. Tawilis
1 t. rock salt
2 T. calamansi juice
1 C. water
patis to taste

Put all the ingredients in a stainless steel frying pan and cook the fish until the flesh is firm then add 1 T. of oil. Serve with patis. 

So easy!!! Plus you can eat the whole fish from head to tail! 

After breakfast, I went to Farmers Market in Cubao to buy ubod for the lumpia I am making for tomorrow.  It was just a quick trip. I did not realize until today that when you buy the ubod and have it cut verticallly it is cheaper compared to having it cut horizontally (which I bought).  I love the ubod in Cubao because it is so tender and not fibrous at all.

I was so busy cooking the whole day! I am very tired , even my baby is very tired as well.

Sans Rival from Dumaguete City

I ate a lot of food yesterday at Chef's Galley and yet my FBS was low and normal this morning!  I am hoping tomorrow's result will also be good.

Sans Rival is one of the wheat-free desserts, albeit high in sugar but still... wheat free.  Corry brought a whole cake home from Dumaguete and Mona gave me a HUGE slice!



So many layers!!!  And the icing was not too sweet nor rich.  I think, maybe they added shortening.

Shortening is one of the not good fats, butter is okay.  I hope they did not use flour when they baked the wafer since it is a commercial bakery.  I bake very good Sans Rival and mine is definitely wheat-free and I use pure butter for the icing.

Nevertheless.... it is one of the best tasting Sans Rival I have eaten!  I am crossing my fingers it will not affect my FBS tomorrow morning.

I cooked Mayette's Adobo again but this time, I used cane vinegar instead of regular vinegar and used achuete oil.



It was even better!!!!  I really love Mayette's Adobo!!!

Hermie cooked sauteed vegetables. 



I complimented her and said it was really delicious! It was like pinakbet without the ginger and the alamang.

Lunch at Chef's Galley with Friends

Mia is in town! My friends and I had lunch at Chef's Galley on C. Benitez St., Q.C. 



It is owned by our friend, Chef Rainbow.  I know I feel safe and assured when I eat there because she does not use artificial seasonings and use only the best and freshest ingredients.

I was able to eat most of our orders except for a few because they were not wheat-free.

Mozarella Sticks with Pomodoro Sauce (Hahahahaha less than 2 sticks because we forgot to take pictures immediately.)  *Not wheat-free.





Fried Kesong Puti - I loved it! LOL Again, we were so excited to eat, we remembered to take a picture when there was just 1 slice left.

I had a delicious and enjoyable lunch with friends.  And so very full! I ate a lot today.  That is one of the greatest thing about the wheat-free diet... there are so many options to choose from.  One just needs to choose wisely.

"Macaroni Salad" spread

Ha!  I know why it was high this morning.  Yesterday, I had sharksfin dumplings, even if I removed the wrapper, I bet they used a starch binder.  The effect of re-introducing even a minute amount of wheat for me means taking several trips to the bathroom.

I love the KFC Macaroni salad but since I cannot eat it anymore, I made my own Macaroni Salad without the ..... macaroni!!!  Hahahaha... Jing and Mona loved it and asked me to write down the recipe.  I used cucumber slices as my bread.



Macaroni Salad Spread (or just add macaroni noodles and it will be a salad already)




450 g. chicken breast, boiled with salt and flaked
1 T. pickle relish
2 T. celery, minced
2 T. red onion, minced
1 small carrot, par-boiled and chopped into small cubes
1/4 C. grated cheddar cheese
2 eggs, hard-boiled, chopped or mashed
1/2 t. salt
white pepper
1 t. sugar
80 ml. Lady's Choice mayonnaise

We also ate the Tinapa with Capers that Tita Tess Colayco gave me.  Thanks, Tita Tess!



It was surprisingly good!  I also ate it with cucumber slices.



I cooked Pork Spareribs Sinigang for lunch. I am learning to cook now using natural ingredients and not with Knorr Sinigang mix or Magic Sarap! Hooray for me!



Mona ordered Lechon Manok from Chic-Boy Jupiter and a vegetable dish.





Corry brought something.... she said, since I cannot eat dessert she bought Herr's Cheese Curls.  I told her.... Corry! I cannot eat that! I relayed to Jing what I said to Corry and she replied:  "Bakit??? Ikaw lang ba ang tao dito?!"  Hahahaha So they had the cheese curls for dessert while I looked on grudgingly.

And then..... the empanada from Kamuning that Mona ordered arrived after lunch!!! 



It is one of my favorites!!!  Waaahhhhhh!!!!  :(  That would have been double whammy for me, wheat + deep fried.  I did not eat.   Hehehehehe I hope Wriggly goes up the table and steal their empanada!!!!

Homemade Beef Tapa

I finally found the taste I am looking for! Mona said she recently cooked beef tapa and she just used garlic, pepper, salt and vinegar.

I really loved it!  You have to get thinly sliced sirloin.  Ask the butcher in the supermarket to use the slicer to slice the frozen beef.  It should be a little bit thicker than sukiyaki cut.

Homemade Beef Tapa - 1 serving



100 g. sirloin, thinly sliced and cut into strips
1/4 t. rock salt
freshly cracked black pepper
2 cloves garlic, minced
1 T. cane vinegar

Marinate the beef for at least 30 minutes at room temperature.

Add 2 T. water in a stainless frying pan and 1 T. oil.  When it boils, add the beef slices. Stir-fry until the liquid evaporates and the garlic dark brown in color but not burnt.

Super yum!!!!!!  I want to eat this again!

Hahahaha Not so perfect poached egg this time because I was cooking 2 things at the same time.

4 weeks of the Wheat-free Lifestyle

It has been 4 weeks since I adapted the wheat free lifestyle and I am very happy with the outcome!  From an FBS reading of 254 last May 25, my sugar this morning was only 69!!!

And..... I lost 9 lbs. in 4 weeks!

I was never hungry and never had a craving. I ate till I was full.  I am really so amazed! I have been struggling all my life to lower my sugar and weight, I used to run 5-7 km a day, and practically would eat almost nothing and then would go on a binge and eat everything.

I could finish Ruffles Sour Cream and Cheddar with Coke light in one sitting.  Now I just think about it ... I never got the urge to run to Rustans Rockwell and get a pack.

It is still surreal to me up to now.  By just eliminating wheat and limiting my carbs, I could enjoy almost all the food that I like!  It really is just a dream.  Sometimes I think my blood glucose monitor or weighing scale is not working properly.

To all those doubting the wheat-free lifestyle .. all I can say is: It really works!!!!

Beef Fajitas

Uh Oh! Why did it become 84?  Dr. Wassmer told me before that I could adjust my medication at my own discretion.  I did it last night.  I just injected 50 units of insulin as opposed to the prescribed 60.  84 is still low and normal but it is going to make my average higher.  So, back to 60 later.  I cannot wait to have my Hba1c test, that is the 90-day average of one's blood sugar level and show it to my doctor!

I made Beef Fajitas with Guacamole  tonight. (With no tortilla, of course)



250 g. beef, cut into strips (But I got the salpicao cut in Rustan's)
1 t. olive oil
juice of 1 lime
1/2 t. rock salt
dash of cumin, chili powder and freshly cracked black pepper
1/2 t. worcestershire sauce
3 cloves garlic, minced

Marinate the beef for 1 hour at room temperature.

1 onion, sliced
1 red pepper, cut into strips
1 green pepper, cut into strips
1 t. olive oil

Saute the onions and pepper in olive oil on a griddle or cast iron skillet.  Push the vegetables on one side of the griddle and cook the beef until it is no longer red.

Serve with grated cheese, cilantro leaves, tomato salsa and guacamole.



Guacamole



2 avocados, mashed
Fresh Salsa with Lime

Combine the mashed avocado and fresh salsa.

Beef Fajita is best eaten wrapped in warm tortilla with a dollop of sour cream.

Finally!!!!!  I was able to cook perfect poached eggs! And I did not even use an egg ring.  Thanks, Bibo for teaching us!
