Wheat-free Shrimp Tempura

I was a little sad this morning because my sugar was way out of control last night. I knew something was wrong with me because I was getting a bit dizzy and I had a headache. I cannot even take Advil for it because my doctor said, it will raise the sugar level.

This morning, I tested myself again and good thing it went down to 177.

I love Tempura! I was worried that I cannot eat it anymore because of the batter. I was talking to Lisa one time and she said that in Dampa, they use Camote flour for their tempura!

So I experimented today and was happy with the result!

It even tasted better than the tempura that you order in some Japanese restaurants.

The color was just a little dark because... Lia being Lia.... Impatient Lia .... increased the heat and the tempura became darker in color.

Wheat-free Shrimp Tempura

1/4 K. Shrimps

1 C. Cooking oil

Batter:

1 egg white

1/4 C. Cornstarch

1/4 C. Camote Powder (SM Makati Supermarket)

1/8 t. Baking soda

1/8 t. Baking powder

1/4 C. Ice cold water

1 ice cube

1 T. Cornstarch for dredging

1 T. Camote flour for dredging

Mix all the ingredients for the batter in a bowl.

Combine the Camote powder and cornstarch on a plate.

Heat the oil.

Dredge the shrimp in cornstarch/camote powder then dip into the batter.

Fry until golden in color and crunchy.

Serve with tempura sauce. The sauce is not wheat free though unless you use tamari or liquid aminos by Bragg's.

Sauce:

1/2 C. Water

1 T. Kikkoman soysauce

2 T. White sugar

1/2 t. MSG

Boil all the ingredients in a saucepan. When the sugar dissolves, switch off heat.

Add the grated radish and ginger. Don't forget to squeeze out the juice before adding to the sauce.

Cheat Day with Shey!

I barely started with my wheat-free diet and here I am again....

Cheat day with Shey!

I like the sound of it. Say it out loud!

We had tempura and Gyoza at Mitsuyado on Jupiter St.

Loved it!!!!! It's my favorite!

Earlier in the day, I already had 4 pieces of Tempura at Yoshinoya.

I guess everybody knows now what my craving for the moment is.

I even bought Camote flour in SM!

Lisa said, in Dampa they use Camote flour for the tempura. I will experiment and will let you know how it turns out.

I cannot cheat anymore!!!!

I just took my Post Prandial ( 2 hours after a meal) blood sugar and it is 354!

If I walk in the ER now, they will not let me go home.

I am wondering what could possibly make the sugar go up?!?

Breakfast was just 2 hard boiled eggs and green tea.

Morning snack was Turon and French fries.

Lunch was half cup rice, 1 braised chicken leg and a small serving of Pinakbet.

Afternoon snack was 4 pcs. Tempura.

Dinner was 5 pieces tempura, half a cup of rice and 2 and a half pieces of Gyoza.

So what could've caused the spike in blood sugar?!?!

No more cheating for me, Shey. :(

I was going to bake chocolate chip cookies for the meeting tomorrow but I would rather not tempt myself.

Feeling sad :(

Peek-A-Boo! I See You!

If there is such as thing in blogspot as " Feeling" the way FB let its members describe their feeling on their status....

Then in blogspot, I can say.... Feeling Excited!

There are only a few things that can excite me and jump start my heart.

One of them is the skin of the crunchy Lechon.

We ordered today from Leonardo's in San Juan.

Another thing that makes me excited is..... Bone marrow!!!

Whenever I serve Bulalo to my guests, I do not eat a lot because I want my them to enjoy the creamy buttery goodness of the marrow.

So tonight was my chance to indulge in something so delightful and sinful!

And.... The best part... All the marrow was only for me!!!!

I ate it with hot rice, calamansi, patis and red chili pepper.

I boiled it for 3 hours! But the end result was worth it!!!!

I could see the marrow peeking from it's hiding place!

The length of each marrow was about 7 inches....

It only yielded about 1/4 cup of marrow for each shank!

I measured my rice, half a cup only but I had to add 2 more tablespoons!!!

Ahhhhhhh such guilty pleasures! Eating marrow may be high in calories but it is also high in monounsaturated fats, the kind that is good for you like Olive oil.

Batgirls Double Delight

Hahahahaha why does my post title seem suggestive?!?!

I was with the Batgirls for two days!

I loved the fact that Mariger was able to join us for 2 consecutive days!

Mayette and Mona were my guests last night. I cooked the crunchy version of Mayette's Adobo!

Adobo Chicharrones
1 K. Pork Liempo with fat
1 head garlic, crushed
1/2 C. Datu Puti vinegar
2 t. Rock salt
10 pcs. Peppercorn
2 C. Water
Add all ingredients in a pot. When it starts to boil, lower heat, cover and cook for 1 hour.
Drain the pork and let it cool for 1 hour. Lay the Liempo slices on a non-stick pan without cooking oil. Cover and cook for 10 minutes on each side over low heat.
Brown the garlic in the pan and use the oil rendered from the fat.
Add the liquid in which the meat was boiled.
When the liquid has reduced and fat has risen up to the surface, switch off heat.
Two options, you can pour it over the pork or serve the sauce separately in a gravy boat.
Best eaten with tomatoes, wansuy and patis!

I felt a little bit of pressure because I was cooking for my Adobo Teacher!

She said, I passed with flying colors!!!

Yay!

This morning, the Batgirls held a garage sale in my house.

I cooked pancakes for them when I woke up.

Lunch was exciting for me because Mariger cooked Menudo without tomato sauce for us!!!!

My Pinakbet sans eggplant and ampalaya.

I want my vegetables crisp-tender so I did not overcook it.

Tita Letty even joined us for lunch!

She brought Sans Rival but I was not able to take a picture.

Merienda was coffee, DEC mini pan de sal, Magnolia Gold butter

And ... Freshly baked Chocolate Chip Cookies!!!

When everybody went home, I took a short nap before going to mass.

Then, the Batgirls sent me messages that they were also very tired but had fun during the couple of days we were all together.

Sometimes, even if our food is just simple in nature... As long as it is delicious.... We are all happy!

Plus...... It is the company that counts!

I went to Rustan's Rockwell after mass and saw they were selling bone marrow!!!

I had to buy a couple of bone marrow shanks!!!

I am so excited! I will eat it with Patis, calamansi and sili!

Heads up: I am NOT sharing!

I cooked the fish balls I bought on Ongpin St. yesterday.

The balls were huge!

But they deflated after a few seconds.

I used Royal Tru-orange for the fishballs sauce instead of Pepsi.

Fishballs Sauce

1 1/2 C. Royal Tru-Orange

1/4 C. Datu Puti vinegar

1/2 C. White sugar

2 T. Soysauce

1 T. Cornstarch diluted in 2 T. Water.

Mix all the ingredients in a sauce pan except the cornstarch slurry.

When it boils and the sugar is dissolved, add the cornstarch slurry and stir until thick.

Let it cool then add chopped red onions and chili pepper.

Kung Hei Fat Choi!

My friends and I went to Chinatown today.

It was a food trip and lucky charms shopping day.

We were supposed to wear something red....

I used my red sneakers.....hahahaha some of them wore red underwear! Guess who????

As soon as we got to Chinatown, we bought the empanada from Quik Snak....

Something we could eat while walking around.....

Mayette ate fishballs .... I bought 20 pesos worth but will cook it at home tonight.

I bought Chicken pie from DEC...

I also bought Asado Roll from Wa Ying.

We wanted to eat there but the queue was soooooo long because it was featured in the Inquirer yesterday.

We ended up at Lamien (hand pulled noodles) just a few doors away.

We ordered Beef Lamien....

Spareribs Lamien.....

Cha Bihon....

Steamed Dumplings....

And

Fried dumplings.

We bought Korean ice cream from one of the groceries.... I got Watermelon Ice Lolly.

We went inside a store and it was selling different kinds of pies! I was so full I could not eat another one anymore.

I was eyeing the Chicken Curry Pie but there was really no space available in my stomach.

So many people! I considered it a "contact sport" just to navigate through the crowd!

I was following the sea of people and look who I saw?!?!

Wonder Woman ( man?)!

I got a bit "starstruck" when the entourage of Erap and Isko entered Ongpin Street!

The people were screaming, "Erap!!!! Isko!!!!".... Now I understand mob mentality.

I am shamefully admitting I also screamed, ISKO!!!!

Following the VIPs were several horse drawn carriages with beauty queens waving at the crowd. I heard a man say to his son.... "O.... Si Miss Universe!" , then when the next carriage passed.... "Ayan si Miss Tapia!"

Hahahahahaha!

I had a great and fun day with my friends!
