General's Lechon

You can now buy General's Lechon by the kilo (850/K) at Petron, Pasay Road/Dasmarinas.

It is not your usual Tagalog Lechon but more of the Visayan style.... Saltier.

We got the Garlic Lechon.

My Kuya and PD prefer the traditional Lechon but Butch, Ate and I liked it.

I went to Salcedo Market last Saturday and bought Kanduli. It is one of my favorites.

Sinagang na Kanduli sa Miso.

Too bad I ran out of Bagoong Isda for my dipping sauce.

I also cooked Pancit Con Lechon

And Pork and Shrimp Sio Mai for the rest of my family.

I experimented with Bacon-wrapped Sio Mai.

Hehehe, it was just for my personal consumption.

Aileen's Sweet and Chili Crabs

This is my first time to cook Sweet and Chili Crabs. My usual crab dish is just plain old steamed or Chili Szechuan Crabs.

My neighbor and fellow KST Facilitator, Aileen Dionisio, shared her recipe with me. It was sooooo easy to cook! And she also taught me how to clean the crabs without injuring my fingers!

One time, while I was brushing the live crab, the claw got hold of my finger and it did not want to let go! My scream could be heard from EDSA!

The secret is........ Freeze the crabs .... Then.... Remove the "restraints" and you can hold the crab while cleaning it.

Aileen's Sweet and Chili Crabs

4 pcs. Live "bakla" crab, cut into half

1/2 C. Magnolia Gold Butter

1 head garlic, chopped

Salt

1 bottle Jufran Sweet Chili Sauce

Melt the butter in a big wok.

Add the garlic, sauté until light brown.

Add the crabs .... Toss and turn the crabs until half cooked.

Pour the Jufran Sweet Chili Sauce and continue tossing and turning the crabs until the shell is bright orange and crabs are thoroughly cooked. Season with salt.

You could stop at this point.... But Lia being Lia..... Who is a diabetic wanted the sauce sweeter!

So I added a few ingredients after pouring the Jufran sauce.

1 T. Kikoman soy sauce

1 T. Lee Kum Kee oyster sauce

1 T. Lee Kum Kee chili garlic sauce

1/4 C. white sugar

Leeks for garnish.

As soon as I started eating,I sent a text message to Aileen to tell her, it was so delicious and " finger lickin' good)! Hahahaha I licked the sauce from the shell, from the legs.... from my fingers! I ate all of it! I did not share with my neighbors!

I should have eaten it with steamed mantou bread so I could have dipped it in the sauce made of butter and "aligue"!!!!

To Die For Homemade Mayonnaise

Finally!

Yes!

This is the mayo that my mom used to make.... Very smooth and silky! Hahahaha Sounds like a shampoo ad!

I did not stop experimenting until I have perfected the recipe. Do not mind the other mayo recipes in my blog. This is "To die for"!!!!

Mayonnaise

6 egg yolks, room temperature

1/2 t. Salt (or to taste)

1/4 t. White pepper

1 1/2 C. Corn oil

5 pcs. Kalamansi, juice of

Combine the yolks, salt and pepper in a bowl. Beat with a wire whisk slowly. Add the first half cup of corn oil, 1/4 t. at a time.

Then the rest of the oil 1 t. at a time, alternating with the kalamansi 1/8 t. at a time.

I did not use my kitchen aid anymore because I might over beat and the oil will separate from the yolk mixture.

A little bit tiring but it tasted so delicious!

The consistency was creamy and not runny.

My two previous experiments were ok but the mayo was a bit compact/jelly-like.

I spent the whole afternoon preparing my Shrimp Sandwich.

Would you believe half a kilo of fresh Suahe only yielded 4 sandwiches?!?!!!!

Whew! So super worth the effort.

 

 

Can't Get Enough of my Homemade Mayo

I made Mayonaise yesterday using 2 egg yolks but my Kuya said it was not as creamy as the one my Mom used to make.

Today.... I used 4 egg yolks! The taste and consistency improved. I bet if I use 6 eggs for a cup of corn oil, it would be more divine and heavenly.... Meaning.... You will go straight to heaven after indulging in my deadly, cholesterol laden homemade mayo!

My wrist hurts now because I did not use the mixer, just my hand but it is so worth it.

My Mom's favorite was shrimp sandwich with sliced pickle chips. It is also my Kuya's favorite so I made him a couple of sandwiches and just 1 for me with lettuce and tomato slices.

It was a little difficult to eat because it had too much filling! But ohhhhh boy.... I loved it!

I invited Mayette and Jon for a late evening snack.

I assemble 2 kinds of club sandwiches for them....

1.) Bacon, lettuce and tomato with chicken salad filling.

2.) Forest Ham, cheese, guava jelly and butter with chicken salad filling also.

Mayette could not stop eating my mayo! I am very happy she really liked it.

I am going to make again tomorrow if I am not lazy and I am planning to use 6 egg yolks for a cup of corn oil!

Pigging out with the Piggies

Hahahahahah! I am so tickled pink by the title of my post.

I had a late dinner with my friends, Mona, Mayette and Jon at Causeway Seafood Restaurant, Banawe St. Quezon City.

Starting from 9 pm up to midnight, some of the dim sum dishes are 30% off.

We ordered lots and lots of baskets of steamed goodies.

We each got one order of Steamed Spareribs....

Steamed Chicken Feet....

And .....Sio Mai

Hehehe I am very happy because they said my Sio Mai tastes better.

And a big bowl of Almond Jelly with Lychee!

We were soooo full after indulging!

On our way home, we all vowed to start exercising again. Lucky Mayette, she already started with her daily routine. I have yet to look for my running shoes hidden at the far end of my shoe cabinet but I really, really want to start my exercise regimen. Sooner than later. I am very fat now!

I am just so glad that my friends are also getting fat! :)

I do not feel alone! (Hahahaha ha .... Snort and giggle)

Chicken Sandwich with Homemade Mayo

I have not made my own mayonnaise in months! I tried making again and I was very happy with the outcome.

There are a couple of mayo recipes in my blog but I experimented tonight with a different one.

Homemade Mayonnaise

2 egg yolks (But I prefer 4-6), room temperature

1/2 t. Salt (or according to taste)

1/4 t. White pepper

5 pcs. Kalamansi, juice of

1 C. Corn oil

Combine the egg yolks, salt and pepper and slowly beat with a wire whisk.

When the yolks have emulsified, add the first half cup of oil, 1/4 t. at a time.

Then add the rest of the oil in thin streams or 1 t. at a time alternating with 1/8 t. kalamansi juice.

I used my Kitchen Aid mixer for this process.

I bought Marby's John Pullman Loaf bread, another good brand.

1 T. of mayo on each bread.

Add the flaked chicken breast....

Sliced tomato and pickles....

And.... Romaine lettuce.

TADA!!!!!!

Brined Roast Chicken

I had an impromptu lunch guests today. Mariger and Jing!

And... Mariel also.

The easiest thing to prepare was the Brined Roast Chicken.

Brining is the process of immersing the meat (poultry or pork) in water with equal part of sugar and salt. This is done to ensure the meat will remain moist and juicy after being subjected to high temperature in the oven or grill.

Brined Roast Chicken

1 K. Whole chicken

1/4 C. Rock Salt

1/4 C. Brown or white sugar

1 T. Black peppercorn

2 pcs. Bay leaves

1 head garlic, crushed

Enough water to cover the chicken

Melted butted or drippings, optional

Combine salt, sugar, peppercorn, garlic, bay leaves and water. Let it stand for a minimum of 2 hours or overnight in the refrigerator. Pat dry the chicken (do not rinse) and roast in the oven for 1 hour at 400F, breast side up.

The chicken was juicy and not dry at all.

You can brush the skin with melted butter or pan drippings every 5 minutes in the last 20 minutes of cooking.... I did not ... that was why the skin was not "shiny ".

The S & R cheese pizza was Jing's contribution.

The Rocky Road ice cream was Mariger's.

Good thing I had spaghetti sauce in the fridge, I did not have a hard time preparing for my "instant" lunch.

We were so happy because we were able to hang out with Mariger. We rarely get a chance to be with her because she works in Manila and lives in Cavite.
