Talangka Season

My FBS report card:  78

Wonderful!  Some people do not really want to believe it is true.  They said, maybe my strips are defective because it cannot be that my sugar is low and NORMAL!!!  It has never been normal for the past 12 years!!!  

Maybe, there is a possibility because, since I came back from Boracay last June, I have had below 200 readings.  I bought a new set of strips and today my FBS is still in the normal range!  So I suppose that should make the doubting Thomases believe in me or rather in this Wheat-free lifestyle I am adapting.

Some of my friends have been having problems with their high cholesterol levels.  Perhaps they are not yet ready to believe in something as new as Wheat-free.   They do not want to eat egg yolks!   But Dr. Davis said to eat eggs, not one per week but to eat what your body tells you to eat.

Dr. Davis said the fat phobia of the past forty years turned us off from foods such as eggs, sirloin and pork because of their saturated fat content - BUT saturated fat was never the problem.  Carbohydrates in combination with saturated fats, however, cause  measures of LDL particles to skyrocket.


In fact, new studies have exonerated saturated fat as an underlying contributor to heart attacks and stroke risk,

He also said to USE OIL GENEROUSLY.  Curtailing oil is entirely unnecessary.  Use healthy oils such as extra-virgin olive oil, coconut oil, avocado oil and cocoa butter.  AVOID polyunsaturated oils such as sunflower, safflower, corn and vegetable oils.

Ok, I am going to test the theory.  I bought Talangka today!!!! 



I did not eat it with rice.  I will check my blood sugar tomorrow.

It is Talangka season already! I wish I could buy it all the time but it is very rare that you will see it in the markets.  I bought mine from Landmark Supermarket.  I know they also sell in Salcedo market but it costs an arm and a leg.

After Lechon.... Talangka is my next favorite food.  Thank goodness SHELLFISH is allowed in the  Wheat-free lifestyle!  LOL Do you think Dr. Davis is aware that there is such a thing as talangka?

Food Diary:

Breakfast::

2 boiled eggs with little butter
half a cup of leftover soup

Lunch:

1 leg quarter Chicken Inasal
1/2 C. rice
stir-fried togue

Snack:

350 g. talangka (early afternoon)
12 pcs. almonds (late afternoon)

Dinner:

Taco Salad with homemade taco seasonings sans the taco shell

Instant Get-Together

My FBS report first..... TADA!!!!  71 this morning!  Can you believe that?  Lisa said this wheat-free diet seems to be working for me.

Jing, Sherman and I had a standing lunch date.  Ever since Sherman came home from Korea, I told him I will cook Lumpiang Shaghai because he likes it.  But Sherman and Jing have been busy lately until last night,  Jing texted me and asked if we can have our get-together today.  I said, perfect since I was still in Rustans Rockwell, I could buy the ingredients for our lunch.



I cooked Thai Bagoong Fried Rice



and Lumpiang Shanghai



I requested for Bicol Express, cooked by Sherman.



So timely, Mona, Corry and Tita Cena had to go to a wake and they also joined us.

Jing also bought Sans Rival from Cake Avenue since I am allowed to eat it.



It is always better for us to have instant get-togethers rather than plan it, then last minute we have to cancel because of some unforseen event.



Sherman will be leaving again next week but for Jakarta this time and then off to Kuala Lumpur.

Have a safe trip Sherman! We will miss you!

Hmmmm not too much rice....

Yesterday, I had 2 servings of white rice, half a cup per serving and my FBS this morning was 111.  So, I really have to eat  1 serving per day only, which I did today.  Crossing my fingers that my FBS would be lower tomorrow.

I am amazed that I was able to last until 8:00 pm to eat my dinner.  To think I only had less than half a cup of white rice and pork ribs sinigang with vegetables for lunch.

It is true that eliminating wheat cuts down the cravings.  So very true in my case!  There was never a day that I did not have a craving! But now ..... no more! I feel like I have been liberated from a prison of my own doing.

Food Diary:

Breakfast:

1 egg, sunny side-up
1 small can Century Tuna Afritada

Lunch:

1/2 C. white rice
Pork Spareribs Sinigang



Dinner:

Salad greens with grapes and almonds

Wheat is an Appetite Stimulant

According to Dr. Davis, Wheat is an appetite stimulant.

To prove a point ... 

When you dine in most restaurants, you are given a bread basket... sometimes you could even ask for a refill.

I rarely indulge in bread thinking that I might get full and will not be able to finish my meal.

But on the contrary ... restaurants serve the bread before you even have your soup or salad ... not to fill you up .... but to stimulate your appetite ... then it will make you eat more food. 

Because if that theory is  untrue ... why would they give you tons of bread in the first place if you will just get stuffed from it? 

So.... think about it .... do you believe wheat stimulates your appetite based on the theory I shared?

My new pen pal....

My FBS this morning was 86!  That is very good! I am still under 90.  The normal FBS for non-diabetics is 100 and 90 for diabetics.

I wrote again to Dr. Davis and shared in his blog that my FBS yesterday was 76 only after 2 weeks of being wheat-free.  I also told him I am starting a campaign to educate people here in the Philippines the evil that wheat can do to our bodies and the benefits of wheat-free living.

Yes, keep telling us about your progress. Too many people see this as a problem unique to North America and hearing about experiences, such as that of you and your friends and family in the Philippines, reminds everyone that this is a worldwide problem.

I want to wake up already tomorrow to check my FBS because I would like to know if what I ate the whole day would affect my score.  I was definitely super wheat-free today.

Congratulations, Lia!

Wow! Maybe it is too early to congratulate myself, but my FBS this morning was only 76!!!

Yes!  If I can maintain this for a period of time then I know my Diabetes is under control.  I have to have a FBS reading below 100 for 90 days so my HBa1c score will improve.  My endocrinologist actually wanted me to have a blood test last June 20, but I am aiming for a better test result, so I will defer it until the middle or end of August. 

I am now at the start of my 3rd week of being wheat-free! I did not even notice that 2 weeks had passed already.  In my Vegan diet, my goal was 21 days but I only completed 19 days.  This wheat-free lifestyle is really so easy!!!!!

Hello??!?!  Remember, Lia???  Who only thinks about food and when she can have her next fix?!?!?

Her next fix of Cheetos Jalapeno? Ruffles Sour Cream and Cheddar with 1.5 liters of Coke Light?  

Why am I surviving in this lifestyle?  Since I removed wheat from my diet I never had cravings anymore.

Eliminating wheat is a natural appetite suppressant.

Bad food does not dominate my living and waking moments.  I still think about food, but lately.... I think about the food that I CAN eat.

I already proved that eating Lechon and Peking Duck did NOT make my FBS spike!

Breakfast:

2 poached eggs ( I am still perfecting the art of cooking poached eggs.)

Lunch:

Seafood fried rice at Mogu
Miso Soup with Tofu
Sauce, cheese and shrimps - toppings of the pizza but I did not eat the crust.  I just scraped off the cheese.

Snacks:

handful of almonds
3 pcs. siomai

Dinner:

Fresh Lumpia with no wrapper and no sauce.  ( I just realized fresh vegetable lumpia is not good without the brown sauce.)



Crushed peanuts

Lemon Butter Sole

My FBS this morning was 101.  I plan to make it even lower.  I tried my best to eat wheat-free today and just had 1/2 C. of rice the whole day.  When I was about to take my evening medications, I noticed I forgot to drink my am meds! Oh no! My fbs might go higher tomorrow after following an almost wheat-free diet today.  I asked Dr. Tricia if I can take it before bedtime, she said I could.

I went to Cash and Carry supermarket today and I saw a lot of things we normally do not have in Rustans!

I was able to buy Sole fish.... I cooked it ala Sole Meuniere sans the flour for dredging.

Lemon Butter Sole



250 g. Sole, cleaned and skin removed
2 T. butter
juice of half a lemon
rock salt
freshly ground black pepper

Season the fish with salt and pepper.

On a non-stick pan, melt the butter until not foamy anymore.  Then place the fish on the pan, turn when the bottom side is a bit brown and cook until the other side is also the same color.

You may add a bit more butter at this stage but I did not anymore.

Season the lemon juice with salt and pepper and pour over the fish.  Let it sizzle then transfer the fish on a plate.

I assembled a small plate of salad with no dressing.  I actually prefer my salad this way instead of adding vinaigrette which I find too tart sometimes and I do not like the taste of olive oil.

I just added green pears and black grapes to romaine lettuce.



I enjoyed my dinner so much!

Peanut oil, Suka tuba and Mama Sitas Inasal Marinade!!!  I am excited about the sukang tuba because in Cebu that was what they use for the dipping sauces of the lechon and the ngo hiong!!!!

I made my very first successful poached egg this morning!!!   Hahahaha ... well ... almost perfect.



Chef Rainbow taught us, it was so easy!!! I used water instead of oil to fry the egg!

1 poached egg
half a can of Hot and Spicy tuna

Lunch:

1/4 K. Lydias Lechon
1/2 C. white rice

Snack:

handful of almonds
1 pc. siomai
1 pc. of hakaw with no wrapper
1 small stick pork bbq

My Kuya offered me a lot of snacks for merienda but I just got 1 pc. each.

Dinner:

250 g. Pan-fried Sole with Lemon Butter
small plate of romaine with pears and black grapes
