Triple Birthday

December 23 is the birthday of PD, Kuya and my Mom who already passed on several years ago.

PD's annual celebration with our senior friends was held at Zuni, Greenbelt.

I was not able to take most of the pictures of the food but the orders were Chicken Galantina for Tita Butchie, Tita Tess, Tita Mita and Tita Josie.

I had the Baby Back Ribs.

PD ordered the Tessie Tomas Salad and Shrimp Thermidore.

Everybody had desserts.

At dinnertime, PD and I ate at Dean and Deluca.

I loved it! They used real crab meat!

Roasted Chicken White Pizza.

I ate it with "leaves" and balsamic dressing!

Hahahahaha The Junkies know how much I hate leaves on my pizza but I'm slowly acquiring the taste.

Strawberry Shortcake!

My most favorite cake now..... Coffee Crunch Cake!

Kuya was not able to celebrate his birthday bcause he was not feeling well.

Praying for good health for Kuya and PD!

I also prayed for my Mom in heaven. I miss her so much.

Lisa's in Town!

Yay! Lisa is in town!

She is from Long Island, NY and she visits her family and friends here in Manila every 2 years.

Her favorite is Fish balls!

I asked Hermie to buy the Shanghai brand from Guadalupe Market.

DO NOT refrigerate it or else it will not expand when you fry it.

I have a new recipe for Fish balls sauce!

Fishballs Sauce

2/3 C. White sugar

1/3-1/2 C. Vinegar

2 T. Soysauce

1 C. Water

1 t. Msg

1 t. Salt

Slurry: 1/4 C. Cornstarch dispersed in 1/4 C. water

Boil all the ingredients in a sauce pan except the slurry until the sugar has melted.

Do NOT stir.

Add the cornsrach slurry. Stir until thick.

Transfer into a bowl and add:

Chopped onions, garlic and siling labuyo.

We had a get together at Dodai's in the evening.

The early birds....

The very lucky early bird who ate all the chocolates of each variant in one sitting.

I cooked Pancit Sotanghon Guisado.

They said it tasted good!. I'm sharing the recipe.

Pancit Sotanghon Guisado

500 gr. Sapporo Vermicelli Noodles, soaked in tap water for 15 minutes then cut into short strips.

250 g. Chicken Breast

250 g. Chicken liver

1 t. Rock salt or 1/2 t. if using fine salt

Soup stock from boiled meat.

1/3 C. Cooking oil

6 cloves garlic, crushed

1 onion, sliced

250 g. Shrimps, peeled

1 carrot, julienned

100 g. Baguio beans, sliced thinly

1 C. Cabbage, shredded

1/3 C. Pantai Oyster Sauce

1/4 C. Datu Puti soy sauce

1 . Black pepper

1/4 C. Kinchay, chopped

1/3 C. Cooking oil or oil rendered from pork fat

Boil 4 C. Water, then add chicken, liver and salt. Cover and let it cook over low heat for 25 minutes.

Chop the liver and flake the chicken. Set aside.

Saute the garlic and onion in cooking oil.

Add the chicken, liver and shrimps.

When the shrimps are cooked, add the carrots and beans. Saute for 1-2 minutes then add the cabbage.

Add the oyster sauce and soy sauce. Continue sauteing for about a minute then add the sotanghon noodles.

Gradually add the soup stock until noodles are soft. You do not have to use all the stock.

Add kinchay and switch off flame.

Pour the cooking oil to prevent noodles from sticking to each other.

Serve with calamansi on the side.

Hahahahaha I inagurated the newly bought Grand Videoke by Alex!

Maybe it was not such a good idea after all. Look at everybody's facial expression!

But hey! My score was 99!

It was a great night!

It is hard to plan a get together during the holiday season because of the traffic and yet our friends were able to make it!

Lomi

I cooked Lomi today!

Would you believe I cannot find a recipe of Lomi in my local cookbooks!?! I had to browse the web and ask friends how to cook lomi.

I came up with a very easy recipe.

The broth came from all the bones I saved from the chicken I used for the galantina.

Lomi

500 g. Lomi noodles, rinsed and drained

1/3 C. cooking oil

6 cloves garlic, crushed

1 onion, chopped

100 g. Ham, chopped

1 C. Boiled chicken

100 g. Shrimps, chopped

125 g. Squidballs, cut into quarters

1/2 C. Carrots, julienned

1 C. Cabbage, shredded

12 C. Chicken stock

1/2 C.Cornstarch dispersed in 1/2 C. water

Salt, pepper and patis, to taste

2 eggs, beaten

Spring onions, chopped

In a soup pot, saute garlic and onions in oil until soft.

Add the ham and squidballs followed by the shrimps and chicken.

Pour the broth. When it boils add the carrots and cabbage.

Season with salt, pepper and patis.

Add the cornstarch and stir until the consistency is slightly thick.

Add the lomi noodles.

Let it boil. Slowly pour the beaten eggs.

Serve while hot.

Top with chopped spring onions.

They loved it! PD said I should cook it again.

It was also the birthday celebration of Ate and her husband, Butch.

I asked my Ate for her food request.

Adobong pusit.

Butch likes Crunchy Bacon slice.

The kids loved the Halabos na Suahe.

I asked Ate if she likes it cooked with butter garlic or other sauces, she said, No.

My family is easy to please. I can cook anything for them but they prefer simple food.

I baked Sans Rival for them as my birthday gift.

They brought a fruit tart for dessert.

FGM's Lechon Night

It was such a wonderful night because FGM ordered lechon.

The clincher?!?

She only invited a few select friends, Jun, Cherry & Hubby, Chacha, Tita and Coach, Ninong and friends.

What does that mean????

More for me!!!!

I was the chop-chop lady for the night!

The skin was so crunchy and the lechon was piping hot! I could not even touch it.

There were lots of other food too.
