Nerie's Adobong Tuyo

One time, the topic of discussion with the Junkies was Adobo. Tricia said, Adobo is very personal. There is no "The Best Adobo" out there because each one has his or her own interpretation of our national dish.

When I spent the weekend with Mariger, her friend brought Adobong Baboy. I asked Nerie how it was cooked and I experimented tonight.

Nerie's Adobong Tuyo

1/2 K. Pork Liempo or pork cubes (shoulder part)

1/4 C. Vinegar

1/4 C. Soysauce

1 head Garlic, chopped

15 pcs. Black peppercorn

2 pcs. Bay leaves

Mix all ingredients in a non-reactive container and marinate for at least an hour.

Transfer the pork and marinade in a cooking pot. Let it boil and then lower the heat.

Cover and cook until there is no more liquid and oil has been rendered from the fat.

Don't forget to turn the meat every 5 minutes.

Did you notice there was no water????

Right! That was why it did not splatter at all!!!

Very easy adobo recipe.

I loved it! The meat was tender and the fat/skin was "makunat"!

I ate a plateful of Strawberry Salad first before eating the Adobo.

I also cooked Pinakbet and ate it for merienda.

I am starting to get used to not eating rice with Filipino food.

All I need to do is just eat lots of vegetables.

I do not miss nor crave rice anymore.

Strawberry Lime Vinaigrette

My experiment today was Strawberry Lime Vinaigrette.

Sammy gave me fresh strawberries from Baguio! Thank you!!!

I did not know what to do with it.

Ohhhh what I really wanted to do was dip it in melted chocolates! As if I can eat it.

Second best thing was to add it to my salad and use the strawberry for the dressing!

Strawberry Lime Vinaigrette

1/4 K. Strawberries, washed and hulled

1 lime, juice of

2 T. White sugar

1 T. Olive oil

1 T. Honey Vinegar

Purée the strawberry, lime juice and sugar in the blender.

Add the olive oil and honey vinegar. Pulse for about 30 seconds.

Store in a bottle container and refrigerate.

I added strawberries, cucumber slices and cheese to my salad.

I absolutely loved the dressing!!!!!

My dinner was Caramelized Fish in clay pot. Ca Kho To

Ca - Fish

Kho - braised

To - claypot

1/2 K. Catfish, steak cut

2 T. Cooking oil

2 T. White sugar

1 T. Garlic, chopped

1T. Shallots, chopped

1T. Ginger, chopped

2 T. Fish sauce

1/2 C. Water

2 pcs. Bird's eye chili

Caramelize the sugar in the oil. Add the garlic, shallots and ginger to the pan. Saute for a minute then add the fish slices.

Add the fish sauce, water and chili. Let it boil and then cover.

Cook over low heat for 20-25 minutes until the liquid evaporates and fish is coated in caramel sauce.

Remember to flip the fish slices with the spatula every 5 minutes.

Serve with cucumber slices and steamed white rice.

I ate it with the cucumber slices instead of rice.

I had the salad first so I would feel satiated already by the time I eat the fish.

Halloween Weekend with Mariger

I just spent the Halloween weekend with Mariger!!!!

Oh boy, did we have fun!

Fun in Lia's language means food and more food!

As soon as I got to the "province" of Cavite we had dinner out because she just got home from the office.

We went to Ineng's and ordered....

And pork bbq for me. I'm still in bbq obsession.

It was my first time to sleepover in her house.

The breakfast was like a page out of my worst nightmare!!!! Hahahahaha.

Last week, I was in my Ate's house and I watched this TV show in the Food Channel.

They featured the pancake as big as a huge dinner plate!

Then when the batter was poured on the griddle, the cook took out the tray from the oven and he cut the crunchy bacon slices into 1 inch pieces then sprinkled on the half cooked pancake batter. It was flipped over and 2 pancakes were placed on a plate.

The nightmare did not stop! 2 eggs fried in butter were placed on top!

Maple syrup was drizzled all over the fluffy pancakes!

And then..... When the host of the show cut into the egg and pancakes, the runny yolk spilled over the pancakes!!!

Wahhhhhhhhhh!!!! It was such a disturbing image up to now I could not get it out of my mind!

Back to the breakfast.....

There was crunchy bacon.... Oh so good!

Pancakes.... I could not eat because of the flour.

And Maple syrup!!!!

See?!?! The objects of my nightmare?!?

She also bought assorted Kakanin. I only tried a little because they were made from rice.

The reason why I invited myself over....

Mariger makes the best Pork Liempo Sinigang!

She was the one who taught me how to cook it 27 years ago!

Whew! I've known her more than half of my life!

We cooked the seafood she bought at Seaside Market for dinner.

Her requests were....

Shrimps in Red Egg Sauce

Crab Maritess... We googled for the recipe.

Chopped garlic soaked in olive oil.

Look at the Aligue!

The garlic was browned in olive oil then the crabs were added to the pan. Chardonnay was used to cook the crabs. We just added a little parmesan at the end.

I taught her how to cook paella.

She cooked her son's favorite Shrimps in butter garlic with Tang orange juice.

The Batgirls thought all the food was just for the 2 of us but she invited her officemates/neighbors for dinner.

Neri brought Pork Adobo. The meat was very tender! I am going to follow the way her Mom cooked it.

Liza brought a bottle of Chiraz and our pica-pica.

I enjoyed the company of Mariger's friends.

FAT is NOT the Enemy

Fat is good! I am not making this up! Scientists have backed this theory by research.

No wonder when I was eating eggs and butter and lechon for 3 months, my cholesterol was lower than normal.

Carbohydrates can kill you. You have to read more on the subject. I know you can't eat FAT in combination with carbs.

But everybody loves carbs! There were times when I was so tempted to give up and eat bread, rice and other food bad for me!

Everytime I would pass by Yabu in Rockwell, my self control was being tested.

Good thing my friends are my anchor, encouraging me to hang on and resist temptation.

Since FAT is not the enemy...... My experiments today were cholesterol overload!

Homemade Chicharon!

I found a recipe online.

But instead of one and a half hours, I had to bake the rind for 3 hours!

I do not like to eat chicharon but I cooked it for Tita Nene. I know she absolutely loves it! I just hope it passes her standards.

I ate the small leftover bits and I was surprised I liked it! It was crunchy and the chicharon was not tough.

Another experiment rich in fat was Squash Soup with Bacon.

I used my frozen chicken stock.

I almost removed the fat!!! Sacreligious!

Squash Soup with Bacon

3 C. Chicken stock or Knorr Chicken cube with water

2 C. Squash, cut into small cubes

1 potato cut into small cubes

Boil the squash and potato in stock until soft. Let it cool and transfer into the blender. Purée and set aside.

4 strips bacon

1 onion, minced

1/2 C. Stock or water

1/4 C. Evaporated milk

Knorr chicken powder, salt and pepper

Fry the bacon slices until crispy. Set aside the bacon.

Caramelize the onions in bacon fat.

Deglaze pan with stock. Add a bit of the puréed squash/potato then pour back into the soup pot.

Add milk and seasonings. If the soup is too thick, thin it down with water.

Serve with crumbled bacon.

KFC - Korean Fried Chicken

I was able to cook Korean Fried Chicken from scratch! I told Jing and Mayette the boys will like it.

The taste somewhat resembles Bon Chon chicken but it is home made!

Less preservatives and additives but more importantly, less the cost!

Hooray!

Korean Fried Chicken

1/2 K. Drumsticks or wings

1/4 C. Thai fish sauce

1/4 C. Rice Flour (or cornstarch if you don't have rice flour.)

Marinate chicken in fish sauce for 30 minutes.

Roll in rice flour then deep fry.

Drain and set aside while you make the glaze.

Glaze

1/4 C. Korean soy sauce

1/4 C. Water

4-6 T. Brown sugar

1 T. Grated ginger

1 T. Grated onion

1 T. Grated garlic

1 t. Rice flour(cornstarch) diluted in 1 t. Water If glaze is too watery.

Put the soysauce, sugar, ginger, onion and garlic in a saucepan. When it boils and sugar has been dissolved, add the rice flour slurry. Boil until thick. Pour in a big plastic container with lid.

Heat the cooking oil again until it is hot and flash fry the chicken.

Remove from the frying pan and put in the plastic container with the glaze. Shake the chicken pieces and put on a serving platter.

Very easy!!!!!

You can buy rice flour, not glutinous rice flour, in Landmark supermarket.

I also experimented with Bibingka using the rice flour but I will perfect it before sharing the recipe.

It was also easy, just like making pancake batter.

I will also try to make pancakes made from rice flour!

I know I should not indulge because it is not grain free but I just want to learn how to cook some alternative to wheat.
