Birthday Meeting with High School Classmates

Happy Birthday Lia everyday!!! Wow! I thought I will not have a celebration anymore  but I was mistaken.  We had our monthly Homecoming meeting at my house tonight and it turned out to be a birthday blowout by my classmates! 



We had a carbo load tonight.  I was just thinking the other day that I have not had pasta or "pancit" (for long life) yet this month.  But my classmates made up for it!

Lei brought 2 kinds of Pancit Bihon, a vegetarian version and one with chicken.



Jo's were two kinds of cakes, Caramel from Costa Brava and Sans Rival from Red Ribbon.

and Red Ribbon Pancit palabok - my favorite and my request.



Cath brought garlic pasta with red eggs, tomatoes and tinapa flakes.



Serla's Pasta was yum! With Spicy sausage, Piri Piri seasoning and green pepper with creamy sauce.



Kathleen, Mylene, Candy and Jeanette brought my favorite lumpiang ubod from Bailon's.





Candy even supplied the party giveaways!  Lip balms for all the girls.

Eileen provided the drinks! Several bottles of soda and juice!  And the  ice.  I always ask them to bring ice for our meetings.

I  just prepared cheese pimiento and chicken sandwiches and also Iced Tea with Orange slices and mint.

I was so overwhelmed! We all had fun and and as usual had our fill of different types of carbs!  Thank you classmates for another Happy Birthday Lia everyday!!!!

Birthday with my Family

Yes! It's another Happy Birthday Lia!  Hopefully this is my last celebration before my REAL birthday!  My stomach can not take it anymore!  I can not even go near a pin, I might burst!!!!

I have been celebrating with my friends, I cooked a lot food... not that I liked eating them but I enjoyed the process of cooking and entertaining my friends.

Today was all about my favorite food.



My family called it "stages".  They are all heart stopping, artery clogging, killing me softly menu.  We all ate it in stages.

Stage 1 - Bulalo soup with bone marrow.



As early as Monday, I already ordered from my favorite butcher in Rustan's Rockwell the bone marrow.  I told him I wanted about 6 pieces and he got me from the center of several shanks.

The marrow was buttery!!!



When I was transferring the marrow from the soup pot to the serving dish, hot boiling soup splattered on my arm.  OUCH!!!!  But never mind... all for the love of the "utak".  Ate, Tita Portia and I ate 2 pieces each.  My brother and brother in law are semi health conscious.  Gilly had the soup and the meat.

Stage 2 - Elar's Lechon

I went to Mila's Lechon first but when I got there, they ran out of Lechon.  I decided to go to Elar's in Quezon Avenue.  The line was long and I was praying that I will still be able to get my favorite part, which is the rib part.

When it was my turn already, there was just one whole slab of the center cut, Yes! God is good, God is kind, God is merciful!  It was my favorite part!  I just bought 1.5 kilos for my family.  They liked it because the meat was tasty even without the liver sauce.  But we can not eat Lechon without the sauce.  The exception is the Cebu style, I am the only one in the family who likes eating it with vinegar.

Stage 3 - Talangka - piece de resistance



I woke up early to go to Farmer's Market in Cubao. 8:30 am is like waking up at dawn for me.  Again, I was praying that there was still talangka.  My next choice was alamango or mud crab but I am not much of a fan simply because it is so hard to get the meat.

Yes!!!  There was just one vendor selling talangka but they were selling it for an arm and a leg but I did not care anymore.  As long as I can eat those little creatures, the price is of no consequence.

Stages 1,2 and 3 are my favorite food in the entire world!  I am glad my family shares the same passion.  I went all over Metro Manila this morning ... a round trip ... from Makati to Cubao then to West Avenue then to Quezon Avenue and on the way home passed through the Manila route - Nagtahan, Paco then back to Makati. 

I have been saving my meat and animal fat quota for the whole week.  I was just eating fish and rice, then in the evening, Turkey and Swiss Cheese sandwich ... just so I can eat this weekend!  Just a few more days to go and I am off to celebrate my REAL birthday in my most favorite place in the entire world!  

Counting the days ........ Sun (hopefully ... been praying for it).... white powdery sand ... and FOOD! Glorious food!

Birthday Lunch with my Senior Friends


Happy Birthday Lia... again!  This time, I celebrated with my senior friends.  I prepared a Chinese lunch for them.  Another week long preparation and two days of cooking but all my hard work paid off.  My guests enjoyed their food and some even went back for seconds.  And.... they all had clean plates!  Yay!!!  I do not mind all the hard work as long as I can give pleasure to the people I am cooking for. 

My own version of Peking Duck is the Tortilla wrapped roasted pork with hoisin sauce a.k.a. It was everybody's favorite.  It is so easy to make  simply because Yaya Hermie chopped all the ingredients.  I made sweet and sour sauce to go with it.

Chinese Style Steamed Fish ....



800 g. Lapu-Lapu, butterflied and deboned
shredded leeks, white and green parts separated
shredded ginger
wansuy leaves
2 T. corn oil
2 T. light soy sauce

Place the fish on a heat proof plate. When the water of the steamer is at its full rolling boil, steam the fish for 10 minutes ONLY.  Transfer to another dish or remove the liquid that has accumulated on the plate.  Spread the ginger, shredded green and white parts of the leeks and wansuy leaves on top of the fish.  Heat the oil until smoking and pour little by little on the vegetables.  Drizzle the soy sauce over it.

They all commented that the fish was very fresh, I bought it in Poblacion Market.  I learned from the cooking demo last week to debone the fish before steaming.  I asked my fish vendor to butterfly the fish and remove the spine.

We used to order from Good Earth  the Chicken Casserole with Mushroom  and Sausage.  I borrowed Tita Portia's Chinese cookbook for the recipe.

Steamed Chicken with Chinese Sausage and Black Mushrooms



340 g. boneless chicken
Chinese Sausage, sliced diagonally
black mushrooms, soaked in hot water for 30 minutes then sliced thinly
1T. Kikkoman soy sauce
1 t. rice wine
1/2 t. salt
1 T. cornstarch

Combine all ingredients and steam for 20 minutes.

I got my Yang Chow recipe from my old Chinese cookbook.  It looks so complicated but actually, it's not.  Hahahaha I had to read the recipe about 20 times to be able to simplify it.  Sometimes, I play in my mind how I am going to cook something, so when it is crunch time, I know what to do.

Yang Chow Fried Rice



225 g. fresh raw peeled shrimps

Marinade:

1/2 t. salt
1 1/2 t. cornstarch
1/2 egg white

Devein the shrimps, pat dry and cut into 3/4 inch pieces.  Mix together the salt, corn starch and egg white.  Stir into the prawns, refrigerate for at least 3 hours or overnight.

2 T. oil
2 cloves garlic, peeled and finely chopped
1 T. Chinese cooking wine

Heat the wok over high heat until smoke rises.  Add oil and swirl around the pan.  Add the garlic and when it changes color, tip in the shrimps.  Separate the pieces and stir for 30-45 seconds.  Splash in the wine.  As soon as it stops sizzling, remove shrimps and set aside.

2 large eggs
2 T. oil
salt
few drops of yellow food coloring

Beat eggs with 1 T. oil, food coloring and salt.  Heat a frying pan until hot, add 1 T. oil and swirl  around to cover the surface.  Pour in half of the egg and tip the pan to spread the egg.  When firm, turn over and fry for a few minutes.  Remove crepe to a plate and cut into strips.  Set aside.

5-6 C day old rice
225 g. frozen peas

Separate rice grains and blanch frozen peas for 3 minutes, drain well.

1/4 C. oil
4 stalks of leeks,  cut into thin rounds, white and green separated
225 g. ham, diced
1 1/2 T. thick soy sauce
2-3 T. clear stock or water

Heat the wok until smoke rises, add the oil.  Stir in the leeks, white part.  Pour in the remaining beaten egg.    Tip in all the rice, turn and toss.

When thoroughly heated, add the ham, stir, add the peas, stir, then the prawns. Still stirring, add the soy sauce and stock.  Remove to a serving platter, put in half of the egg strips and the green spring onions.  Arrange the remaining egg strips on top for garnish.

Sauteed Vegetables



broccoli florets
sweet peas
carrots
red pepper
green pepper
2 cloves garlic, finely chopped
1 inch ginger, finely chopped
2 T. cooking oil
4 T. Mama Sita's Soy Stir
1/2 C. water

Heat the wok, add the oil.  Saute garlic and ginger then tip in the broccoli and carrots.  Add the Mama Sita soy stir sauce and water.  When vegetables are crisp tender, add the rest of the ingredients and continue tossing for about a minute or two. 

I researched for a nice beverage for the lunch.  I did not want to serve soda or juice so I came up with something from the internet.

Sparkling Iced Jasmine Tea



1 C. Brown sugar
3/4 C. water
6  Jasmine tea bags
3 1/4 C. boiling water
1 1/4  C. Pellegrino Sparkling water
lemon slices
sprig of mint leaves

Boil sugar in 3/4 cup water.  Set aside.  Steep the tea bags in boiling water for 5 minutes.  Cool, then add sparkling water, lemon slices and sprig of mint leaves before serving.

When my guests  took their first sip, they immediately asked me what it was.  I told them I made the iced tea from scratch.  They said it was refreshing.

I forgot to take a picture of my give aways!!!  I baked a batch of Gilly's brownies using the mini muffin pan.

I am very happy to have inherited my Mom's friends, Tita Butchie and Tita Mita.  Then... our monthly lunch group became a bit bigger with the addition of Tita Josie, the friend of Tita Mita ... and now Tita Tess joins us every once in a while. 

They all have one thing in common .... all of them have been students of Tita Portia.... well ... two things in common ... all of them are my senior friends!

A Very Happy Birthday to Me!

Happy Birthday Lia everyday!   I invited my friends to celebrate my birthday today for lunch.  It was a week long preparation but all worth it... all of it done with love!  I had to think of what to cook that they will enjoy.  Hermie also had a whole week to prepare the house, the plates, flatware, pork barbecue, baked tahong, etc. 

I changed my menu selections several times and finally came up with the following......

Waldorf Salad



6 pcs. Fuji Apple
1 can pineapple tidbits
1 pack raisins
1 sachet Lady's Choice Mayonnaise
1 sachet Mayo Magic
Toasted walnuts
Lettuce leaves

Drain the pineapple tidbits.  Mix the mayonnaise and mayo magic in a bowl.  Peel the apples and cut into cubes, add immediately to the mayo mixture to prevent oxidation.  Add the rest of the ingredients.  Arrange the lettuce leaves in the salad bowl and put  the Waldorf salad on top of the leaves.

My successful experiment .... Beef Pot Pie - Everybody's favorite!



1.5 K. Beef kalitiran
3 T. soy sauce
3 pcs. peppercorn
3 1/2 C. water

1/2 C. butter
1 C. white onion, chopped
1 big can button mushrooms, cut into 4.
300 g. potatoes, cubed
300 g. carrots, cubed
1 pack frozen peas
1 can Jolly Cream of mushroom soup
1 knorr beef cube
black pepper to taste
1 recipe Pastry crust http://liasfoodjourney.blogspot.com/2010/08/home-baked-apple-pie.html
1 egg yolk

Boil the beef in soy sauce, peppercorn, bay leaves and water for two hours.  Cool then refrigerate for a minimum of 6 hours or better yet, over night.  Set aside the broth.

Cut the beef into small cubes.

Saute onions in butter until soft.  Add the cubed beef then the mushrooms.  Pour in the broth, when it boils add the carrots and potatoes.  When the vegetables are tender add the frozen peas.  Dilute the mushroom soup in 1 can of water until it is not lumpy anymore then add to the stew.  Season with Knorr beef cube and pepper.  When the sauce is thick already, transfer into an oven proof dish.  Top with pastry crust, cut slits on top and brush with egg yolk.  Bake at 350F until golden brown.

Jing and Sherman brought the bubbly and Becky's Swiss White Chocolate cake for our dessert.





I do not like to eat cakes or pastries that much, but this is my favorite cake, I had a huge serving!



I am very happy today! All my friends were able to attend.  It has been a long time since the group has been all together because some were abroad for quite a while.  They loved the food!  My Beef Pot Pie experiment was a hit!  Yay!  I have been imagining for weeks how it will taste.

Culinary Journey with Master Chefs - Jay Gamboa

Barangay Bel-Air and Women of Bel-Air sponsored a cooking demonstration today entitled "Culinary Journey with Master Chefs".

The guest chefs were Jay Gamboa of Azuthai and his Thai chef, Watee, from Phuket, Thailand.



My friend, Celine, also attended together with her cook.  It was an enjoyable, entertaining and most of all, a delicious afternoon.

They showed us how to cook four of Azuthai's bestsellers.  I will share with you two of those recipes, the ingredients are easy to find plus the recipes are even easier to follow.

Azuthai Chili Garlic Prawns



Seasoning:

2 T. white sugar
3 T. light soy sauce
1 t. salt
1/2 C. water

1 T. vegetable oil
200 g. Prawns, headless, split with tail and shell
1 T. garlic, minced
1 T. chili, minced
1 T spring onions, chopped

1. Combine the seasoning in a bowl and mix well. Set aside.
2. In a wok, heat oil and stir fry prawns until just done.  Remove prawns and set aside.
3. In the same wok, saute garlic and chili, add seasoning mix.  Bring to a boil.  Return prawns and add chili.  Toss well and top with spring onions.

Another very simple recipe anybody can cook is ....

Steamed Whole Boneless Apahap



1 pc. Apahap (800 grams), whole, scaled and gutted.
         To be placed inside the fish:

1 pc. kaffir leaves
3 slices ginger (sliced)
3 slices lemongrass (sliced)
1 stalk celery
3 pcs. spring onion (sliced)
2 T. salt and pepper
2 T. lemon juice

For the Sauce:

4 T.. lemon juice
4 T.  Thai fish sauce
1.5 T. palm sugar
1.5 T. white sugar
4 pcs. chili, minced
1 t. garlic, chopped
1 T. coriander roots, chopped

1.  Remove the spine of spine of the Apahap from the back. (Ask your fish vendor to butterfly the fish like "daing" but to leave part of the head intact.)
2. Put all the ingredients inside the fish.  Then steam the fish for 10 minutes ONLY, do not overcook.
3.  When fish is done, combine all ingredients for the sauce in a bowl and pour over the fish.
4. For garnish, place three slices of green lemon and coriander leaves on top of the fish.

After the demo, the most exciting part was the food sampling!!!!  The Thai Iced tea was so refreshing!  They gave us a small plate of Phad Thai, Fresh vegetable spring roll with peanut sauce, Green Chicken Curry over Thai rice



and Tapioca with Coconut cream in pandan cups.



I can not wait for the next Culinary Journey on August 25.  I know they invited Jessie Sinsioco of Le Souffle.  I hope next time my other friends can join me!   Hmmmm I wonder what food will they let us taste.

Happy Birthday, Marianne!

The first time I met Marianne was when we were in the 6th grade.  We became much closer in the 7th grade because we were seatmates and we both belonged to the Top 10 students of our class every quarter.  Hehehe  ... Yes!  I have some brains, you know!!!!  I am just too lazy to use it  these days.

She celebrated her birthday last August 7, a few friends of mine gave her a small surprise dinner party at Chef's Galley in Q.C., owned by Chef Rainbow, another grade school classmate.



The place is so cozy, we had it all to ourselves... so you can imagine how much fun we had.



We ordered our favorites....

Rainbow's Salad with Mango Dressing ... super yum dressing!!!!



It was almost exactly like the Bohol Bee Farm Honey Mango dressing .... it was creamy and sweet but not too cloying....  nor annoying! Hahahaha! Hey, that was a beautiful rhyme.

We also ordered several Fried Kesong Puti... we dipped the homemade bread in the oil.


 

The special for the day was the Paella ala Catalana.



I loved it!  The rice was so flavorful.  It is so different from my paella but I liked it just the same.  Hahahaha I could have finished one serving.  Maybe next time I will come back and will not share with the others!

Rainbow's gift to Marianne was a whole Coffee Ganache Cake!



  Hehehe Marianne let us have a few slices.



It is her favorite.  It was not so sweet and the texture of the ganache was velvety.  MMMMMmmmm    Hahaha  That was what could be heard after I had a forkful of the cake.

I am very happy that I got in touch again with my friend. We had lost contact for years but even though we have not spoken to each other in two decades it was as though we were just in grade school last week.
