My Eating Festival in Cebu

I spent my birthday weekend in Cebu with my Ate and my niece, Gilly.

Would you believe we just ate and went back to Marriot Hotel to let our stomachs rest? And then eat again?!

As Gilly would put it.... This is like an Eating Festival!

Good thing our flight to Cebu was after lunch. I did not have to wake up early! I just brought my baon bag....

The bag was very important, it was where I stowed my precious cargo going home!

My baon ..... Cheese curls, chippy, sandwiches and a bottle of water!

I always want to make sure there is something I can eat if ever I get hungry. Our airports have poor selection of snacks. The other goodies were in my carry on in the overhead bin.

The most important thing one must remember when "attending" an eating festival is to wear the proper attire!

An EATING DRESS!!!!

After we checked into our hotel, we immediately went to Ayala Center to eat CNT Lechon at their food court.

We did not want to go to other branches anymore because it was already 5 pm and we were so hungry already.

When we got there, (gasps) the PIG was missing in action!!!!

We had to wait for the 6 pm delivery. Good thing we were able to snack on some dimsum and...

Ate's "must eat", chicharon Bulaklak.

When the "star" of the evening arrived, you should have seen me dancing in joy!

I told my Ate we should have our own order of lechon so I do not panic and can breath easily because I eat very slow.

I cannot match people eat piece per piece. I love to savor my food.

After we had our fill of CNT lechon, we then went to Cafe Laguna.

We were not able to eat there last year because we did not have enough time! We were always full.

That was my Ate's obsession... To have merienda at Cafe Laguna. I never heard the end of it for a year. The only time we could have eaten there last year was after our buffet breakfast at Marriott!

You think we were done for the night?!?! Not by a long stretch! We had dessert at Fudge, Ayala Center.

Ohhhh at last at 10 pm the eating festival ended for the day.

We started at 5 pm so you can imagine the marathon we did!

Ate said her stomach had its own heartbeat!

Breakfast the next day was buffet but I did not eat a lot.

I think I am the only person who likes her bacon "not crunchy". I specifically asked the chef to cook a few slices with brown sugar.

We heard mass at the new Ayala Chapel.

Would you believe we were so tired we went back to our room to rest!

Late lunch at Abuhan Tres.

They gave us extra marrow! I called them several times to make sure.

I was in heaven!

It's the only thing I eat whenever we order Beef Pochero ( Nilagang Bulalo).

Good thing, Gilly does NOT like marrow and only eats meat!

Ate's pre-requisite Chicharon Bulaklak.

My favorite - Mille Feuille! I always order this whenever I am in Cebu.

It was so flaky! My Ate used to tease me that the cafe owner hired the baker of Shamrock Otap!

You will not believe this but we went back again to our hotel room to take a nap!

Dinner was at Ayer's Lechon in SM Cebu.

We had dessert at.... Where else!?! Dessert Factory!

It was a tiring day full of eating activities.

My 2nd eating dress....

Hmmmm it looks like my stomach is my getting bigger and bigger!

We told ourselves that we would eat breakfast early but we could not get up! It was almost 10 when we went down. I did not want to eat a lot because it was almost too near lunch time.

There are only two reasons why we love to go to Cebu... The first one is Lechon and the second....

Beef Pochero!

Kusina Uno serves the best Pochero in my opinion.

The broth was very flavorful, meat and cartilage so tender.

Not that much marrow though, but still, I was a happy camper.

Chicharon Bulaklak! So light and crispy, the "Bulaklak" was paper thin!

Dessert was right across the street.... Rico's Lechon!

I LOVED the Spicy Lechon!

They even served it still warm from the roasting pit!!!!

We could hardly breathe because we have been eating and eating!

The Original flavor was just ok in my opinion.

It was time to head to Manila.

My birthday weekend was truly so satisfying!

I went home with a full and happy tummy!

Thank you Ate and Gilly for another birthday weekend in Cebu!

Death By Chocolate Trifle

It started with a chocolate bar given to me by Cristina on my "Birthmonth".

Yum!!!! A whole bar of Belgian Milk Chocolate!

I could have eaten it one block at a time but decided to use it for the Death By Chocolate Trifle.

I set aside some trifle for Cristina.

It was my back up dessert for my KST catering stint in case the Vietnamese Corn Pudding did not turn out well. Thank Goodness it did! I asked Mona to cook it for me because I was busy assembling the Goi Cuon.

I was so fortunate last night because FGM Cindy answered my plea for help when I ran out of all purpose cream!

She gave me two tetra paks.

I was able to put whipped cream on the top layer!

My savior! Thanks FGM!

Since I did not serve it at KST.... I shared it with my neighbors!

The Junkies and I had dessert!

Tricia brought chips and chicken something dip with cheese!!!

So good with wansuy and a dot of hot sauce!

I started drinking soda again!

I know it is bad.... Have to get rid of the habit.

I am waiting for my other neighbors and friends tomorrow to try my Death By Chocolate.

Of course, I will share it also with my family!

Death By Chocolate

Chocolate cake or brownies, broken into cubes

Ganache:

500 g. Milk chocolate

500 ml. All purpose cream

Whipped cream:

500 ml. All purpose cream, chilled

1/2 C. Powdered sugar, sifted

Chop the chocolate into small pieces and put it in a bowl. Make sure there is no water in the bowl or else the chocolate will seize.

Heat 500 ml. cream in the microwave for a minute or two or heat it in the saucepan until it almost boils.

Pour hot cream over the chocolate. Do NOT stir. Let it stand for 10 minutes then stir slowly.

When the chocolate melts, let it cool slightly and cover with cling wrap. Chill in the refrigerator for 30 minutes.

Whip the ganache until it is lighter in color and has doubled in bulk using the Kitchen Aid with the wire whip attachment.

Spread a layer of the whipped ganache in a trifle container. Layer with the chocolate cake or brownie pieces.

Then spread again a layer of whipped ganache and chocolate/brownie pieces.

Top with whipped cream. Refrigerate overnight.

Whipped cream:

Chill the bowl and wire whip attachment for an hour.

Pour the cream in the bowl and whip until it starts to look "fluffy". Add the powdered sugar and whip until the cream has doubled in bulk. Be careful not to overbeat.

Vietnamese Crispy Roast Pork (Thit Heo Quay)

I experimented today with Vietnamese Crispy Roast Pork - Thit Heo Quay

Will use it as a filling for the Banh Mi I am going to make for my KST catering on Wedensday.

I am finished making the pate.

All I need to assemble the banh mi is the Vietnamese baguette at Bon Banh Mi on Mayapis street which I am going to pick up tomorrow and make the do chua.

I followed the recipe from this website : http://www.asiadish.com/recipes/crispy-roast-pork-belly/

The procedure was so easy! I already checked out different websites and videos and this is the easiest recipe!

I just need to adjust the seasoning a bit. Instead of 2 tsp. salt for the skin, I will just make it 1 tsp.

Otherwise, the recipe is perfect! I used my turbo broiler.

The skin was crispy and the meat was moist! Not dry at all.

I also cooked fried rice.

Earlier in the day, I copied the fried shrimps I ate at FGM's house the other night.

Speaking of FGM..... She gave me orange ice cream!!!

It's Billy's Birthday!

FGM Cindy invited me to the birthday party of her brother, Billy!

I was so excited to attend because of......

The last time I attended a birthday party, Mayette's, I was not able to eat lechon because I was sick.

But tonight, I had my fill of crunchy skin!

Not a lot though, even though you want to eat and eat lechon, it is just not possible.

I also tried all the food on the buffet table.

There was another cake for Jun, FGM's good friend.

The Leche Flan was so smooth and creamy!

Cha-Cha and Pia sang a very beautiful rendition of Let It Go!

Now I want to hook up my sing along machine and cause major flooding in the metropolis!

I love to sing! Hahahahahaha But it is not for the public's ears.
