Happy Birthday, Gilly!

My niece, Gilly, celebrated her 12th birthday last October 21.  We were invited today for lunch at M2M, New World Hotel.  I was having a hard time yesterday, I could not decide if I should get Gilly the Brownies cookbook or acrylic paint by color number set.  My Ate said, Gilly would enjoy the latter.  True enough, when she opened her present, she loved it!

I am still suffering from my allergy problems so my buffet skills were not put to extreme test today.

Of course the first thing I got was my favorite Lechon, skin and ribs.

It was a brunch buffet so they had breakfast food.

I also had the shrimp mushroom - meatball noodle soup.



The Ceasar salad was really good!



Lots of chunks of Parmigiano Reggiano!!!!

My dessert was just fresh fruits, dried figs and apricots, nuts, jello and assorted cheeses.



See???  Not bad at all.  I did not get the sushi, roast beef, seafood and the whole lot anymore.  I was feeling under the weather!  Just imagine what I would eaten if I was 100% well!

Tita Portia did not enjoy the lechon so much because there was no FAT!!!!   

The celebrant only ate tempura and siomai plus her dessert.



My Kuya just ordered the Hamburger and did not take buffet brunch.



It was a happy family lunch get together.  I was amazed at the willpower of my Ate because she just ordered a plate of salad and brought her portable food scale!  She is following the Cohen diet and has lost about 12 lbs. in 28 days!  Not bad at all!!!  Way to go Ate!

Happy Birthday, Gilly!!!  Until the next year!

Kamias Shake

The very first time I had Kamias shake was several years ago at the restaurant of Mina Gabor in Roxas Blvd.  Then I was able to drink again in Cebu!  It was really good, I would fly back to Cebu just for the Iba Shake!  Hahahaha  and eat it with Lechon, of course.

I told my friends it is very easy to make.



We have a Kamias tree in our backyard but after the recent typhoon, Hermie said there were no more fruits.  I was able to buy in the market this morning.  I placed 1/4 K. in the juicer,  then transferred into the Osterizer with 1 C. ice cubes and 5 packs of Splenda.  You can use 1/4 C. sugar syrup and blend for a few seconds.

Sugar syrup 1:1  1 C. water + 1 C. sugar

Boil until sugar melts, cool before using.  Can be stored in the fridge.


I tried cooking Humba last night because I liked the Humba I ate in Cebu but it did not turn out the way I wanted it to be!!!

Hahahaha It was actually SCARY!!!!



It tasted like Paksiw na Pata!   So, I just bought saba and fried the bananas, added it to the Paksiw and dried banana blossom.  I added steamed Taiwan pechay..

So much better!!!! 110% better!



Paksiw na Pata

500 g. pata slices
4 T. vinegar
3 T. soy sauce
4 T. brown sugar
1/2 T. tausi
1 C. water
1 bunch dried banana blossom
6 black peppercorns
4 pcs. saba banana, sliced into 3 diagonally and fried

Boil pata with the rest of the ingredients except fried banana.  When the pata is tender, add the bananas, simmer until the sauce is thick.

Hermie cooked monggo soup for me.

Girls Day Out in Cebu

Marianne, Catherine, Candy and I spent a day in Cebu to eat!  We have been looking forward for this gluttonous trip for weeks! Hahhaha!  Marianne even said we can not wear anything with buttons, zippers or garters  that might constrict our stomachs!  I bought a tent dress for this outing but then, my thighs will rub against each other so I thought I would be more comfortable  with shorts!

Our first stop was at Zubuchon.



It is a new place opened by Market Man.  He has an interesting menu and very easy on the budget.

Catherine brought home Zubuchon chicharon for pasalubong.

Our next food stop was at La Marea at Crossroads, Banilad.







Since we were still so full from lunch we just shared an order of Frozen Green Tea Mochi





and Warm Brownie Cup.



Lava-cake like brownies topped with vanilla ice cream.

We went to this little residential resto called Ateks so I could try the Ngohong lumpia.



It tasted like fried lumpiang ubod with five spice powder.



The best part was the dipping chili sauce which was like the gyros sauce.  You have to mix it with their native vinegar.  SUPER!!!!  



They all bought to take home for pasalubong, I did not because I try to avoid eating fried food.

We went to the main CNT across SM to buy lechon but they ran out!!! Panic time!!!!   They called their SM Supermarket branch which was just across and we reserved  4 kilos of Cebu Lechon. It was so nice of them to give us some crunchy skin with fat.

This is the reason why I love going to Cebu.
 We could not eat a lot because we were on our way to have dinner.

We went to Cafe Elyssa in Parian, an old ancestral home converted into a gallery-restaurant.

We wanted to go to more places but we did not have enough time and there was no more space in our stomachs!



I was so glad I felt better during our excursion.  I have not been feeling well lately due to bad allergies. I had to go for the big guns.  Bought my prescription medicines and pumped myself with steroids, Fern-C, Tylenol, double dose of anti histamines and lots and lots of prayers just so I can go to Cebu.  I could hardly open my eyes prior to the trip, went through 2 packs of Kleenex in a day.  My fervent prayer was to be able to taste all the food and God did not disappoint.  I felt so much better when I woke up and it went on until our red eye flight home.

A little mind boggling though, when I was eating, I did not cough nor sneeze! I told them it was probably the cure for my allergies!   Hahaha Then while we were waiting for our flight at the Waterfront Hotel across the airport, I coughed and Catherine said:  You are hungry again, Li?

It was an enjoyable day spent with the girls.  We wished we could stay longer! Still many places we have to try!!!  I can not wait for my next Cebu food journey!

Love Conquers Distance

I was in Cebu yesterday for a day trip with my friends just to eat Lechon.  People seemed so incredulous that we went all the way to Cebu for that.  Why not?  My Grandmother used to take me to places when I was little whenever she had a craving.  Pork Barbeque from Nepo Mart in Pampanga, Pancit Malabon with Camachile biscuits in Malabon, Grilled Tilapia in Los Banos, Sinigang na Kanduli at Bahay Kawayan in Taytay, etc.

So, I thought it was natural to go to different places just to eat what I wanted.  Sometimes, I would invite my friends to join me in my adventures. We rode the bus to eat Crispy Pata in Candelaria, Quezon.  Mona and I went to Calamba just to try the Bulalo at Aviles!  Hahaha The trip took longer than the time we spent eating.  I went all the way to Tagaytay for the Bangus at LZM. Went to Cebu last March for a day of overindulgence and enjoyed CNT Lechon for breakfast. I had so many adventures around the metropolis and beyond just to satisfy my cravings du jour.

Our main event in Cebu was at Zubuchon Restaurant, Mango Avenue branch.  Anthony Bourdain said the best roasted pig in the world he has ever tasted was prepared by Market Man (Market Manila blogger), the owner of Zubuchon Lechon.  Good thing Candy reserved a table for us and our favorite part of the Lechon, center cut - ribs!!!



All the flavors are there!  The Lechon has a clean modern taste.  I was afraid the addition of some herbs would ruin the taste for me but it did not.  The meat was so tender!  Even the denture challenged will not have a hard time eating it.

We also ordered the Five Pork Rice.



It is their version of bagoong fried rice but with lechon bits, belly fat, chicharon, lard and lechon drippings!!!!!  Who could say NO to that?

 We tried the famous adobo of Market Man.  It was braised slowly until the sauce evaporated.  Mayette would have loved it.




We felt guilty because most of the food were cholesterol laden, so we ordered Ensaladang Talong.... as decoration only HAHAHAHA No! We ate it.



Candy let us try the Budbod kabog... it was like suman but instead of malagkit rice, bird seeds were used!



Something new and interesting to the palette.

 The Iba (kamias) shake was really refreshing!!!



A great equalizer for all those porky dishes we had.  I would fly all the way back to Cebu just for it.  There was no tartness and yet there was a zing to it.

It was a delicious and satisfying lunch. We all had a happy smile on our faces.

People say that LOVE conquers distance ... I say ... My love for food conquers distance... there is no place too far nor too out-of-the-way for me.

Happy Birthday, Wriggly!

My little boy, Wriggly, turned 13 years old today and his litter mate, Kuya Sylvester or better known as Kuya Silver.  We had a little party together with his Ninang Celina and other Titas.

Ninang Celina got a Costa Brava cake for Wriggly.  It is the favorite flavor of his Mama.




Ninang Celina loves Wriggly.



Ninang also bought special lengua de gato.



 Tita Jing brought pan de sal for Wriggly and pork barbecue.





Tita Mona brought Beef Mechado!

Cooking Demo by Chef James Antolin

There was another cooking demo today at the Bel-Air covered court and the guest was Chef James Antolin.  He showed us how to make Prawns Thermidor on a Tart Shell, Beef Bourguignon and Taboule of Fresh Fruits.

The Prawns Thermidor was easy to make.  I though he was going to teach us how to put it back on the shell of the prawns but he used a tart shell instead.  He served it with Salad greens drizzled with Mango Vinaigrette.



Prawns Thermidor

1 Kg. Black Tiger prawns, peeled, deveined and chopped into small pieces
30 g. Fresh parsley, chopped
90 g Fresh or canned button mushrooms, minced
40 g. celery, small dice
90 g. bell pepper, small dice
120 g. Parmesan cheese, grated
120 g. Quez-O, grated
30 g. bread crumbs
80 g. white onions, minced
30 g. garlic, minced
225 g. butter

White Sauce:

480 ml. All purpose cream
20 g. minced white onions
2 t. roux
salt and pepper

In a saucepan, melt butter, add onions, garlic, mushrooms, bell pepper and prawns.  Saute until prawns turn pink.  In another saucepan, mix roux (equal parts flour and butter) with all purpose cream and 2/3 of the cheeses. Mix over heat until thick.  Add prawn mixture, saute until well incorporated.  Season with salt and pepper.  Fill tart shell with prawn mixture and top with remaining cheese and bread crumbs. Torch or broil in the oven.

Tart Shell or Pate Brisee

3 C. All purpose flour
3/4 C. unsalted butter
2 pcs. egg yolk
1 t. iodized salt
8-10 T. cold water

Sift the flour, make a well in the center and add the yolk, butter, salt and 4 T. water. Work the dough with your hands.  Add the rest of the  water a tablespoon at a time and knead until dough is pliable.  Wrap and chill dough for at least 15 minutes or up to 3 days.

On a floured surface, roll the dough until it is 1/4 inch thick.  Lay the flattened dough into desired molds and chill the prepared tart shell for 30 minutes.  Preheat oven to 320 F.  Place a piece of parchment paper into the tart shell and fill it with dried beans.  Bake until golden brown.

Chef said, Prawns Thermidor is best served with Salad greens, orange segments, thin tomato slices and Mango Vinaigrette.

Mango Vinaigrette

Mango Puree
Extra Virgin Olive oil
Salt and pepper to taste.

Add olive oil to pureed mango and emulsify.  Season with salt and pepper.

Chef James also showed us how to cook Beef Bourguignon.



  The recipe is very, very long and seems complicated but the Chef said it is actually not.  You can prepare the dish ahead of time and will taste better the next day.  I do prefer the recipe of Julia Childs which Marianne and I experimented on a few months back.  I told her our experiment tasted better in my opinion because we cheated and used Knorr beef cube!  The version of Chef James has more red wine though.

Chef James prepared a different kind of dessert which he prepared in one of the Emmy Awards after parties in L.A.  It was Taboule of Fresh Fruits.



It is made of couscous soaked in citrus juices and mint topped with fresh diced fruits and drizzled with passion fruit and orange syrup.

It was an educational afternoon.  The nice thing about attending cooking demonstrations is that the Chef will teach or share with you tips you do not normally find in cook books.   There is another one scheduled on October 27 and I am looking forward to it.
