Turbo Broiler Lechon Belly

My guests today were my senior friends, a post birthday celebration.

Tita Tess, Tita Josie and Tita Mita. PD was our photographer. Tita. Butchie was not able to attend the lunch today.

I know they all love Lechon in all forms so I experimented today with Turbo Broiler Lechon Belly.

Turbo Broiler Lechon Belly

2 kg. Pork belly, washed and dried with a kitchen towel.

2 t. Rock salt

Cut slits against the grain and sprinkle salt on the meat side of the belly.

2 t. Rock salt

1 T. White vinegar

Turn over, wipe the skin dry and brush with salt and vinegar.

Put on a wire rack over a tray and refrigerate uncovered overnight.

Wrap the meat side of the belly with aluminum foil leaving the skin exposed. Put on top of the wire rack in the turbo broiler. Bake at 200C for 80 minutes.

Brush the skin with white vinegar every 20 minutes.

Increase temperature to 250C and brush with oil drippings every 5 minutes. Bake for an additional 40 minutes.

Meat was moist and tender.

Serve with Lydia's Lechon sauce, available at Lydia's Lechon, Landmark Food Court.

I also cooked Pad Thai.

Fried Shrimps

Catfish Salad.

Our dessert was the Golden Langka ice cream.

As usual, our afternoon was filled with stories which started before the war, the Japanese occupation, their lives in the US when they were students, about people they know in common and about the friends who departed early from this world.

It was educational listening to their life experiences.

I am looking forward next year when I celebrate again my birthday with my senior friends!

Week 1 Report

I am happy to report that I have positive news to share!

On my first week of the wheat-free lifestyle, I lost 5 lbs. and my sugar is down by 50 points!

From an FBS of 251 last Monday, the reading this morning was only 200. Sure, it's still high... long way to 100 but if I can keep this up, I will reach my goal!

There was a moment a couple of days ago that I thought I would give in to my wheat craving!

I wanted to eat pizza, siopao and Pancit! I was like a substance abuser wanting so badly to get my next fix.

But then, I thought to myself... If I can get over this wheat craving... I will be ok.

Sure enough, when I pass by displays of bread and pastries now, I do not get the urge to eat wheat anymore!

I have not been totally wheat-free the whole week but I only ate a very minimal amount. I hope to eliminate it from my life but if not, at the very least, limit it's quantity.

Dimsum is my Waterloo. I went to 168 this weekend and had a few of my favorites with the least amount of wheat.

Siomai

Radish cake is made from rice flour but some add wheat starch as a binder.

I also ordered Lechon Kawali. This was a safe choice.

Would you believe I bumped into my Ate at 168?!?!?! What are the chances you would see someone you know in that labyrinth of a mall?

We then had dimsum at King Chef in Lucky Plaza.

Samgyeopsal is another favorite "diet" food of mine.

I am not very good with eggs. My Spanish omelette looks so horrible!

I miss Mon. He really cooks very nice looking delicious omelette.

My FBS would probably had a better reading if I did not reward myself with Langka Ice Cream after losing 5 lbs.

I brought out my ancient electric ice crusher.... Hahahahahaha Their translation - "Smash Ice Device".

I even bought a parfait glass and parfait spoon!

I am so inspired to continue my wheat-free lifestyle. I hope to get better results next week!

As usual.... Wish me luck and help me achieve my goal.

Weaning From Wheat

I started the Wheat-free lifestyle last September 1 but I am still trying to wean myself away from wheat.

So far, so good. I have not eaten bread, pizza, pasta nor pastries.

I ate at Lucky Rainbow twice in the last 4 days. There was wheat in the dumpling wrappers and wheat was used to ferment the soy for the soysauce.

But the rest was wheat-free. (I think?)

I also ate Raffles Sour Cream and Cheddar when I watched a movie with the Junkies yesterday.

One of the ingredients of the chips is MSG.

MSG is made from wheat.

Trying so hard to adhere to the lifestyle, I cooked Beef Sinigang the other night with fresh tamarind. The Knorr Sinigang Mix has MSG so I did not use it.

Bicol Express is wheat free. I have not added yet the green chili peppers when I took this photo.

Good thing Vicky gave me a wheat-free dessert!

Perfectly paired with Tinapa, red eggs and sweet fresh tomatoes!

I cooked Pinakbet but it took me about 30 minutes to finish a small serving!!!

Typical breakfast, 2 eggs and grilled tomatoes.
