Tita Josie's Beef Mechado

I love the Mechado of Tita Josie.  She taught me how to make it several years ago but my attempts never tasted like hers!!!  I always eat a plateful of rice whenever I eat her Beef Mechado.  She cooks really well because she is from Pampanga.

She invited a few people from our Bel-Air church group to her apartment in Manansala, Rockwell.  Mona was a "saling pusa" because she is not from our Parish but Tita Josie invited her as well.



We had a simple get together but I really, really loved her cooking!!!

Beef Mechado.  I think I had about 3-4 servings.



Potato Salad



I could not stop eating her Potato Salad!  It is something I could not make.  Mine always turn out watery because I put a lot of sugar.

Best eaten with  Steamed Prawns



The Smoked Boneless Bangus was good also.



Our dessert was Fruit Salad with Lychees.

Happy Birthday, Cindy!

Cindy is my neighbor, she invited me to her 50th birthday celebration with her close friends. 



I am so glad I attended because I ate my favorite Lechon parts to my heart's content! 

She got Elar's Lechon! 

 

Lots of crunchy skin and I taught her brother-in-law how to chop the lechon.



 There also prepared other delicious food!

My plate filled with ribs, crunchy skin, baked mussels and prawns. 



She ordered the Chocolate Cake from her friend.  I only tasted the icing and the caramel filling but I could see the cake was very moist!

 

Cindy also loves dogs and I asked if I could see her whole pack of Shih-tzus!  It was very overwhelming! 



She has a total of 8 and Helen's only job is to take care of all the dogs.

I enjoyed the company of Cindy and her friends, as a matter of fact, I went home past midnight!

Wheat-free: Butter Garlic Shrimps with Orange Sauce

Corry ordered Butter Garlic Shrimps with Orange Sauce today.



The good thing about it, we ate it here in my house!  I cooked her request, Sinigang Pork Belly with bits of floating fat.  Jing brought Pichi-Pichi with Cheese from Amber's



We were "celebrating" Mona's last day of eating bad food because her cholesterol level is over the roof.  She will not be able to eat anything with butter or aligue when she starts her LOW-FAT diet.

Whereas,  I could eat to my heart's content because I am doing the wheat-free diet.  I do not want to "toot" my own horn but we all enjoyed our lunch today! The Orange sauce was really delicious and we were sipping it!  I was "drinking" from my bowl!  I did not want the sauce to mix with my rice so I put it in a soup bowl.

Mona asked me to cook the Butter Garlic Shrimps with Orange Sauce a few weeks ago for her birthday celebration.  We were not able to eat a lot because we let the other guests enjoy it.  But today...... we had the dish all to ourselves!!!

It makes me happy when people say, "SARAP" (delicious) after each forkful of the food I cooked for them.  It makes up for all the hard work and effort I put into it.

Wheat-free: Fresh Mushroom Soup

I love going to Farmer's Market!

They have everything, well, almost everything I need!  A few of my friends started ordering from me already and I bought most of the ingredients in Cubao today.  I have a standing order of Butter Garlic Shrimps with Orange Sauce tomorrow, 2 trays of Paella on Sunday and I will bring Fried Lumpiang Ubod on Saturday as my contribution to the celebration of the feast of St. Francis the Assisi, Patron Saint of Bel-Air Sub-Parish 3.  I am the Street Leader for Zodiac.

As I was checking out the produce in the market, I saw fresh mushrooms and bought a quarter of a kilo.  I was thinking already of the mushroom soup Tita Tess was telling me about sometime ago.  I do not buy the canned cream soups anymore because of the sodium content and other artificial ingredients they add to it.

Fresh Mushroom Soup


1/4 K. fresh Shitake Mushrooms, stems removed and sliced


2 T. butter
white onions, chopped
garlic, minced
3 C. chicken stock (use chicken bones for the stock with salt and pepper)
1 small can Alaska milk
salt
freshly cracked pepper
grated Parmesan, optional

Melt butter in a pot.
Add the onions and saute over low heat for 10 minutes until soft and translucent.
Add the garlic and the mushrooms, saute for an additional 5-10 minutes.
Pour the soup stock and let it boil for 10 minutes.
Transfer into a blender or use an immersion blender if you have one.  Return the pureed soup to the pot.
Simmer for 30 minutes over low heat.
Add the milk and continue cooking for another 5 minutes.  Do not let it boil or else it will curdle.
Season with salt and pepper.
Top with grated Parmesan cheese if you like.

Wow!

I really loved my soup!!!  I finished it all!  I thought I would just have one serving but I could not stop myself.  

I did not eat anything but the soup so, I guess that was ok.

I spent the afternoon cooking again.  I love the cool weather when I am cooking in my kitchen because I do not perspire.  I cannot switch on the fan because the flame of the stove will die.  I refuse to use the air-conditioner in my kitchen because my electric bill will go up!  Hahahahaha! I just did not have walls anymore to put the extra AC that is why there is one in my kitchen.

I cooked the filling for the Fried Lumpiang Ubod.


Mayette got me the bagoong from Bataan!  I made Binagoongan Baboy and used a lot of F-A-T for PD!!!!


I asked her if it was all right with her or should I give her lean meat.  She said: NO! I do not like meat.

So...... PD had Binagoongan FAT!


OMG! I am so afraid for her but it is something she really likes.  What can I do?

This is the famous "Ginataang Langka" that Wriggly "ate" the other day.  I asked Hermie to cook again for Mona.


As soon as Hermie placed the dish on the dining table, Wriggly started barking as if to say, Hey!!! That's my new favorite food!!!!  How was he able to tell that it was Ginataang Langka??? He could not see it for sure. And he never barks at most of the food that we put on the table.  Boggles the mind.

I do love to cook... it excites me... wondering how an experiment would turn out.  Sometimes, I would be successful, other times.... not at all.  But what is important is that I had fun! Practice makes perfect.  I would not stop until I get it right.

Hmmmm .... I think Wriggly got that trait from me!!!!

Man to Man Guarding

Man to Man Guarding. 

Do you know what Wriggly did last night????  I was watching The Voice and brought my plate inside my room to eat dinner.  He was barking and barking, so demanding, asking me for food.  But I did not give him.  He is not allowed people food.

Then...... I had the great opportunity, he went out of my room to drink water. I immediately closed my door.  Ha!! Score One for Lia!

When I brought my plate out, what did I see????  Wriggly stealing food on the dining table!!!!  (Picture on file. He has been doing this for years!)

 

He ate the Ginataang Langka I was saving for Mona!!! GRRRRRRR Wriggly!!!

So, today....  I adapted a man to man guarding stance.  It was such a lovely rainy weather for cooking and I spent the whole afternoon in the kitchen. I figured, will just store the food in the fridge for the days I am lazy to do anything.

I experimented with Kansi. 




It is a Visayan soup that is a cross between Nilaga and Sinigang. We always eat the one from Island Chicken Inasal in Boracay.

I used the Batuan, a souring agent, I bought from the Negros Fair last week.



Mona and I will eat it for dinner tomorrow. 

My favorite vegetable dish is Kilawin Puso ng Saging.



I plan to eat this for lunch with fish tomorrow.

I let Mona try my version of (Mee) Krob.



The trick with wriggly is you have to push away the chairs away from the table.  And I mean waaaayyyyyy away!  It was my fault that I left a chair last night about 2 feet from the dining table.  He is a great "leaper" and will not stop until he gets what he wants.

HA!!!!  But I did not give him the opportunity tonight.  Hehehehe BLEH! Wriggly!!!!
