Chicken Sandwich with Homemade Mayo

I have not made my own mayonnaise in months! I tried making again and I was very happy with the outcome.

There are a couple of mayo recipes in my blog but I experimented tonight with a different one.

Homemade Mayonnaise

2 egg yolks (But I prefer 4-6), room temperature

1/2 t. Salt (or according to taste)

1/4 t. White pepper

5 pcs. Kalamansi, juice of

1 C. Corn oil

Combine the egg yolks, salt and pepper and slowly beat with a wire whisk.

When the yolks have emulsified, add the first half cup of oil, 1/4 t. at a time.

Then add the rest of the oil in thin streams or 1 t. at a time alternating with 1/8 t. kalamansi juice.

I used my Kitchen Aid mixer for this process.

I bought Marby's John Pullman Loaf bread, another good brand.

1 T. of mayo on each bread.

Add the flaked chicken breast....

Sliced tomato and pickles....

And.... Romaine lettuce.

TADA!!!!!!
