Paksiw na Pata

Earlier in the day, when I was feeling so bad, I wrote about cooking Nilagang Pata instead of Paksiw na Pata. But Hermie cooked a big pot of hot soup this afternoon and I gained enough strength.

Paksiw na Pata

 

 

1/2 K. Pork pata

1/4 C. Datu Puti vinegar

1/4 C. Datu Puti soy sauce

1/4 C. Brown sugar

1 T. Peppercorn

1 pc. Bay leaf

1 bunch dried banana blossoms

2 C. Water

1 T. Fish sauce

4 pcs. Saba banana, cut into 2 and fried

 

Put all the ingredients in a pressure cooker and simmer over low heat for 30 minutes.

Add the fried saba bananas.

Continue cooking, uncovered, until the sauce has reduced to desired consistency.

Serve with fish sauce and steamed white rice.

 

Mona is sending me tomorrow champorrado from scratch, so in turn, will be sending her my Paksiw na Pata. I hope she likes it. Hermie said, it was perfect... Not too salty nor too sweet.
