My numbers are going down!

I cannot believe it! In just one week, I was able to lower my blood glucose to 124 from 254!  That is such a monumental victory for me. 

I am still in the pursuit of discovering low fat vegan recipes to make my food more palatable and delicious.

My experiment today was my own version of Japchae.

Sweet Potato Noodles with Vegetables



I made a lot because I had guests for lunch.  They said it was very good but I will experiment again and will post the recipe.

I made another batch of vegetable soup but added more tomatoes this time and used fresh corn.



I put the rest in small containers and kept them in the freezer.

I pray everyday I can sustain this lifestyle change.  It has just been a week but I feel as though I have been doing this forever. When I see positive results, I am more determined to make this work.

  5. Where do you buy the sweet potato noodles and the rye bread pala? I'm having a hard time looking for a store that sells good rye bread. Pls advise. Thanks. :)

    @Beth - I bought the sweet potato noodles in Rustan's. I think you can get it from Korean groceries also. You can buy the rye bread in Rustan's or French Baker.
